How long do you supposed the roasting pan full of fat stayed in the grill? And would you put some of that tallow on the brisket when you wrap it? I have seen a few videos where they do that to keep it from drying out. Theres some steps that got cut out there that I have questions about

Do you have a preference of butcher paper or foil and why? I've had brisket done either way and both quite tasty. I've never understood putting the fat side down to create a barrier but again I've had some done that way and it was pretty good so so the cook knew what he was doing

Fat-side down creates a barrier from the heat source. There's a fair degree of heat radiating upward from the heat baffle. It's the same reason he used the jerky rack... to create a little more space between the meat and the heat source. Personally, and I'm no expert, but I'll put aluminum foil over the baffle and aluminum pans with a bit of water on top of that (beneath the grates). That way, when the meat is placed on the grates, the heat isn't radiating directly on the meat. Brisket takes a long time to cook and if there's an area of the brisket being constantly subjected to higher temps, you stand the chance of severely overcooking (burning) one area while the rest comes up to temp.

@@curtisdrakesr4900 Not necessarily, but because the heat source is so close to the meat, you have to take a little more care. Most times (with other types of smokers) the pan of water is a way of maintaining that 225 degree target. With a pellet smoker it's smart enough to keep the temperature right where you set it without needing water. But, the heat source is just close enough that, in my experience anyway, you want a better heat deflector than the standard baffle. At least for a low-and-slow smoke that will last as long as brisket. With something like a pork butt, you can offset it where it isn't sitting directly over the fire pot.

@@timt561 thanks for info. The way I smoke wouldn't be considered smoking to bbq purist. I use a smoke tube filled with pellets, love pit boss freedom blend, on a gas grill with only one burner lit and meat offset on top warming rack. Tube will smoke 4 to 5 hrs depending on pellets. I do pork butts and beef roast. Not enough room for full brisket but have done a couple flat cut ones but they are pricey

Kamado Kong ...I still can't find a list of what it comes with other than a two-tier grate....does it come with the diffuser plate, on the site doesn't list no content in box or hard to find description list.......WHY?....Just Cooker,racks, nest and a couple pics. Not even a accessory list of options when considering this cooker.....just a assy parts list...Okay so what do I need extra if I buy this cooker, and I finally seen a video that says it comes with cover, does it really? Since your price has changed since you made the Videos...what about an update, moving on if I can't really find what you get without fishing around to find out.......LAZY
