I think I would add a little maple syrup in lieu of the white sugar, as that goes very well with bacon...

@@momona7637 No reason why not. Use oil in the pan and taste when adding vinegar to make sure the balance is right. Dont overcook the red meat. Just make sure they are small pieces. Chicken sausages cut small would be nice. Just wont be a German potato salad by name.

this is common way to make potato salad in my region. love to see an american do this and you make it totally right. but we call it Speck-Kartoffelsalat or in your language " Bacon Potato Salad" looks same kind as dirty as it do if i or my dad made it, apriciate that ^^

Well done John, you did a good german salad! Never grilled my potatoes like this, especially when the salad has to be ready in time for the grilled goods - but we, as Germans, do the salad very similar! Greetings from overseas, keep up the good work. Very enjoyable to watch!

I made this tonight for dinner, omg, a flavor explosion. this was so good. gonna take leftovers to work tomorrow and warm them up. definitely use wine vinegar, ordinary white has too much acidity

In Southern Germany we just use potatoes, finely chopped onions, beef broth, vinegar, sunflower oil, salt, pepper, a little nutmeg and optionally chives for garnish. It is a very simple salad but quite delicious.

I'm from Germany and this would never ever be made like this. You left out a LOT. That being said this looks delicious and I will try it with grilled spuds. Of course I would add the rest of the ingredients, too. Looks awesome!

Great recipe chef john, my wife is german/austrian and this is very similar to her recipe. The red waxy potato salad gets a little old after a while when all anyone ever does to change it up is use either a mayo base or mustard base, but after a while it gets somewhat boring. I am from rural kentucky and i have no idea why we do not have bricks of bacon fond stored at the ft. Knox repository, you could probably exchange a brick of that for a 55 gallon drum of oil, this country never thinks outside the box, lol.

Being a chef myself and doing thousands of recipes looking, This recipe above is a great one technically... The amount of bacon is a personal taste. One could choose one of is own preference. As for the spuds being cooked on the BBQ, this is an option, as an oven baked ones or even boiled , cooled off before peeling can be much of a muchness as an end result... We could split hair without markedlly add or substact much..... Well done chef

Corey Ptaszynski very simple - boil potatoes until tender, peal off the skin and slice them. Fry sweet onions, slice pickles and add both to the warm potatoes. Add salt, pepper, vinegar, olive oil and sliced chive. Let it rest for at least one day. The only difficulty is how much vinegar you need to get the right balance.

When I was a kid, my Mom used to serve Hot German Potato Salad. (YES. Served hot!). Always loved it. Nice and tangy from the vinegar.

Yes, my Grandmother and older Aunts made a hot German potato salad, tangy, a little sweet, with bacon, and cooked potatoes. Grilling them is a great idea, but one can always make it with baked or fried.

Sooo I am german as well and I lived my whole life in south germany.. And for the other confused germans here: Warm potatosalad with vinegar, onions and bacon is a thing here. It is not the most common way to eat it, which would be cold and without bacon(in the south!) , but it does exist and I personally love it!

Over here we basically have two schools. In Northern Germany you would get potato salad made from cooked and peeled potatoes, cooled down, than sliced and mixed with mayonnaise, onion cubes and chopped gherkins, salt, pepper,maybe a bit of mustard, depending on how spicy the mayonnaise is. Sometimes you add cooked and diced eggs or even cubed tomatoes. Chives are an option as well. Goes wonderful with fried fish in batter. In the south of Germany (and in Austria) you cook and peel potatoes, then slice them while they are still hot. You mix them with hot beef broth, vinegar, onions, mustard, salt, papper, sugar and chives. In some southern regions you would do it like you did, but with hot potatoes, adding hot broth. As they cool down from hot to warm, they will absorb more of the dressing. Cayenne, however, is very un-German. Love all your recipes, btw. Recently tried your Nashville fried chicken and it was so good ...

Hm, close enough, haha! And greetings from Germany, the Rhineland-Palatinate region, where this dish is traditional. But I'd add some flour to the onion and bacon, then let it thicken in a bit of broth, and then add the vinegar, sugar and so on. It makes a very velvety marinade that penetrates the potatoes very well (and I swear I could lick the plate clean of that marinade!). That's what my great-grandmother taught me, and it's a killer potato salad. Also, she taught me never to mix it up with spoons because the slices break. I was taught to put the potato slices into a large bowl, pour the marinade over and let it sit for 15 minutes. Then take another large bowl and tilt the contents of the first one into it carefully, let sit for 10 minutes. Then repeat to the first bowl and let it marinate another 10 minutes.

That looks good. I just had a laugh at my reactive responses - 'but that's not how you.....you missed the... you should do...'. Haha. I set that aside and will try both of your potato salads - classic American and German grilled. My German granny's family could not make a mixed dressing, but would layer the hot potatoes with the separate ingredients: chopped egg, crisp warm bacon, translucent onion, white wine vinegar, a neutral oil, plenty of S&P, and then let the whole salad bathe in the dressings for 24 hours or overnight, upturning the container every few hours. We always have it for Christmas, regardless of whether it's a hot roast dinner or a cold one. Every single member of my family has at some point stolen to the fridge in the dark hours and had a few illicit bites of the potato salad. Some of us (I am not admitting to it) have even had too many bites, and then thought 'Oh well they'll notice that, I'm going to be told off anyway' - then gone ahead and eaten the lot. Much shouting on Christmas morning about WHO ATE THE POTATO SALAD. Now the cook hides it.

My first food memory is my grandfathers mashed potato salad. Grandma was a good cook, but the potato salad was my grandpa's specialty. He always made the potato salad. He would make it while grandma was transferring everything to the dining room table, it was the last thing placed on the table so it was still warm. If there was any left over it would go in the fridge for the next day to be served cold. But honestly, I don't think I ever remember any being left over. I still make it from time to time, and I have some potatoes sitting in my pantry that I need to cook. I think I might have to make Grandpa's potato salad soon.

My Great Grandmother's recipe is very similar, except that she always added some celery seed to the dressing. You may want to try this as it gives it a little twang that goes well with the acidity of the vinegar.

I dress my potato salad (whilst the potato is still hot) in lemon juice, garlic and olive oil. Delicious and it’s also good cold.

Not a mayo fan either I use miracle whip, 1/2 cup sour cream, tablespoon or two of sweet pickle juice and Weber’s horseradish mustard to color, off white My neighbors love it

Kori Skene I live in the southwest US and German potato salad is my go to as I won’t serve anything with mayo at a BBQ when it’s 95 degrees.

I love to grill/smoke potatoes...sometimes I throw them directly on the hot ashes to char them and then eat the whole thing...charred potato skins are yummy!! Love German potato salad and will give this recipe a try...thanks Chef John!

Well, Kman, as someone who grew up in the north, sadly, they are the only hush puppies I've ever had. Sad fact, but true. So, if I can make them myself, then I'll know what they should taste like.

*FireCracker* Copy that 👍 I grew up, up north as well. I will tell you, that if you try hush puppies from 10 different places, they will all be different! They are as unique and different as recipes that people have for lasagna, or meatloaf, or probably for any food for that matter.

I would probably add caraway seed as well to the dressing. I absolutely LOVE the flavour with potatoes and onions. Thanks for this!!

This is almost my grandmothers exact recipe, she was German. Only difference was that she made a roux out of the bacon fat and onions and then added water to make a gravy. When she first poured it over the potatoes it almost looks like soup. Let it sit for 30 minutes or more and the potatoes were completely absorbed all the gravy. Brings me back to my childhood.

Chef John. I've been deployed with the US Army to Afghanistan several times. I fell in love with some of the culture, esp. the food. Kabuli Pulao or Qabli Palaw. I'd like to see this on your show. I watch every video you make religiously.

great recipie as always my moutch is watering right now. Although in Poland we skip vinegar and add some picles, som roasted red bell pepper would be also nice. Becouse every German invention is usualu perfcted by Polish people ;)

I often make this same(if not just damn similar!) recipe but towards the simmer at the end I’ll add a tablespoon or two of whole grain mustard and it is soooooo good!!!

Every decent German recipe starts with render bacon and fry onions in bacon. This is the kind of potato salad that I grew up with but my mom and grandma used apple cider vinegar.

This reminds me of a recent slow cooker experiment that turned out really well. Small potatoes, thick sliced sweet onions, topped with over a pound of thick cut bacon that I generously coated with chipotle powder. It's like German potato salad with a kick and the added bonus of liquid bacon fat to sop up with some great bread.
