I live in rural Virginia. I haven't been able to find mexican oregano at my local stores. Is there a place online that I can order it from? I'm sorry if I sound clueless. I've been making a poblano casserole for quite a few years now except I had to modify it because I was diagnosed with T2D. So now I am on a low carb/keto diet but I don't have to miss out on all the good flavors of mexican food. I use cauliflower rice on the bottom in place of the rice and cauliflower florets in place of potatoes and no tortillas at all in mine. It still fills you up but without making you feel heavy. Cauliflower takes on all the flavors and you will not miss the carbs. I thought I would but I don't and I was a big time tortilla eater!. I just wanted to share that because I know some might have a diabetic person in their family and they don't have to miss out on a delicious casserole. 🙂

Stephanie have you ever made beef chipotle tostadas? I cook 1 lb ground beef seasoned with Lawry’s Garlic salt and some black pepper and diced onions. When you beef is done minced up about 3 chipotle chiles in adobo sauce and add with all the adobo sauce from the can. I spread sour cream on my tostada shell then the beef, diced onions, cilantro and lettuce. No salsa needed for this tostada!!!

OMG yes say that in your best valley girl voice. The roasting the peppers on open stove top is CLASSIC. NO really that is great, you don't need no fancy stuff just put them on the gas burner to roast. FYI if you like hot dogs the best hot dog is roasted over an open burner on the stove. PROVE ME WRONG lol

A sheet of tin foil works great as a lid on cast iron pans, I have a few that don't have lids that fit too. But I love my cast iron!

I found a hack for the frozen ground beef. Freeze ground beef into a large freezer bag and make it flat. It thaws in no time. I buy in bulk and freeze by the pound.
