Full written recipe Khichu
Prep time: 5-10 mins
Cooking time: 15-20 mins
Serves: 3-4 people
Ingredients:
WATER | पानी 3 CUPS
CAROM SEEDS | अजवाइन ½ TSP
GREEN CHILLI | हरी मिर्च 7-8 NOS. (CRUSHED)
CUMIN SEEDS | जीरा ½ TSP
SALT | नमक TO TASTE
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
GROUNDNUT OIL | मूंगफली का तेल 2 TSP
RICE FLOUR | चावल का आटा 1 CUP
PAPAD KHAR | पापड़ खार ¼ TSP
SALT | नमक IF REQUIRED
GROUNDNUT OIL | मूंगफली का तेल
For serving
METHI MASALA | मेथी मसाला
GROUNDNUT OIL | मूंगफली का तेल
Method:
In a non stick kadhai add water, carom seeds, green chilli, cumin seeds & salt, switch on the flame, cover the kadhai & bring the water to a boil.
Once the water comes to a boil add fresh coriander & groundnut oil, let the water boil for 3-4 minutes.
In a separate bowl sieve the rice flour, then add papad khar in the water & gradually add the rice flour while mixing with a rolling pin.
Keep stirring vigorously until all the flour combines, make sure there are no lumps, you can use a spatula to ensure that.
Cook over low flame for 2-3 minutes until everything comes together like a dough, then taste & adjust salt if required.
Switch off the flame, cover the khichu & set it aside until you prepare the steamer.
Apply oil on the steamer plate & transfer the khichu onto it, spread it unevenly on the plate, place it in the steamer & steam for 8-10 minutes.
Once steamed, serve hot & top it with some methi masala - groundnut oil.
Your quick & easy khichu is ready.

In kokan region of Maharashtra we make tandul ukad almost with same process. Just tadka and buttermilk additional. That also tastes awesome

There is a variation. Use 2 cups of water one cup of curds mix well and then boil it. Then mix the rice atta. Very tasty.

It would be great to see the steaming done in packets of banana leaf tightly wrapped. One could also use turmeric, pandan or jack fruit leaves. We see this quite often in the far east. in fact these are tied as bundles using banana stem and taken along as a snack during a day trip. The options are many and plenty here. Make the Khichu without any spices and making "fillings". Fillings can be: Savoury (as Sanjyot has show), banana, grated coconut with jaggery and the list can go on. This is then made into a filling and then wrapped with the leaves mention above. A simple and great idea. Thank you very much😃

My mom used to make similar dish called mor kali using rice flour, buttermilk and tadka. It's consistency can vary and can be cut to pieces also

Excellent Chef👨🏻‍🍳, I am belonging to Gujarati family; it's our traditional brunch at Evening 5:00 p. m. Favorite Snacks!!! Specially in Winter and Monsoon!! You were right in Villages we do prepared with haey burnt and addition we add Kamboi / Kalhar in staem water for make this more flavour full Khichu. Try it once you will be surprised with this amazing tests. And these herbs you will find in Winter season only!!! We also prepared Umbario using these two herbs. Yes v were making khichu with traditional way. On chula. After mixing flour v keep for sometime on chula then v remove most of lakdi from chula but v keep d coals which get from lakdi on d pot. So it’s cook slowly. N this type of kichu’s taste was amazing. V cook 8 to 10 kg flour at a time for making papad

We have something similar in our region in Madhya Pradesh. It's called "Khich" and it's made of Jowar Atta and served with Ghee. It's delicious. Do try.

HI, I m from Charotar area in Gujarat and and yanha pe yeh sabase jyada banata hai, authentic way as u said it make on Chula and bade tapele ko pahele mitti ka lep lagate and fir directly usme hi banata hai, asie alag se steam nai karate, and fir uska khichiya papad dry ghans me sukate hai, and as u said niche chipakata hai, u cant believe woh choda sa chipaka hua and jala hua most tasty part hota hai khane k liye...ppl love it... and the way u made is also very good... I ur fan and mostly all ur recipe I saw and many of them we made as well.... :)

It’s similar to what Maharashtrians make - tandulachi ukkad. The key difference is the addition of buttermilk, garlic and kadhipatta and skipping the steaming in the steamer. So pretty quick dish this ukkad.
