薏粑是我们海南人的传统美食。薏粑象征吉祥和幸福,丰收,祝福与情谊。不但自家人吃,还可赠送亲戚和朋友。薏和意谐音,就是表达心意和良好愿望的粑。
一般上,我们会在喜庆的节日如生日,嫁娶,新居或满月做来吃。闰月时,嫁出去的女儿更会做回去给娘家让母亲在闰年平平安安,事事顺遂。
薏粑是用糯米粉包馅料制作的小吃,有各种馅类,芝麻类、花生类、椰丝类。但它并不注重馅料,而更为注重糯米皮是否蒸得柔软滑而不粘,这才是真正的功夫。我今天就在这个视频把这一个功夫传授给你。
Yibua is a traditional Hainanese snack. It symbolizes blessings, auspicious, happiness, sweetness, abundance, joy and friendship. We love gifting Yibua to friends and family as a sign of love and blessings towards them. As Yi (薏) sounds like 心意 (a token of blessings), therefore, it is a perfect gift for all occasions.
Yibua in general has grated coconut, brown sugar etc in it and it depend very much on which part of Hainan Island you come from. However, the most important bit is the dough as it must be chewy, soft and silky smooth. That requires some skill and secret recipe which I am sharing with you today.
馅料:-
• 水125克
• 斑斓叶2片
• 椰糖 200克
• 黑糖 50克
• 椰丝 500克
• 玉米粉 20克
• 盐 5克
• 花生100克
• 芝麻 20克
• 干橙皮 3克
• 冬瓜糖 100克
皮:-
• 水600克
• 木薯粉20克
• 粘米粉20克
• 菜油80克
• 糯米粉750克
Fillings:-
• 125g water
• 2 pandan leaves
• 200g Coconut Palm Sugar or Gula Melaka
• 50g molasses
• 500g freshly grated coconut
• 20g corn flour
• 5g salt
• 100g peanut
• 20g sesame seeds
• 3g dried orange peel
• 100g winter melon candy
Dough:-
• 600g water
• 20g tapioca flour
• 20g rice flour
• 80g vegetable oil
• 750g glutinous rice flour

請問您的糕点隔天还会軟吗?如果粉团可以前一天準備吗?第二天才做,或先把糕做好第二天早上才蒸可以吗?

我不太懂你的问题。是不是问我为什么要加薯粉和米粉吗?糯米粉的确很好吃,但是加了那两样会更加好吃。 试试你就知道了。

You have omitted ginger?

I would not say omit as according to my family recipe, there is no ginger. There are many types of fillings depending on which part of the island you come from. Some even only have peanut and no coconut. It is just that ginger version is a more common version in Singapore. If you like to add ginger, ginger juice can be added before peanut and sesame seeds. As in how much to add would be according to your taste.

海南岛很大, 每一个村都有自己的传统和口味。就像意大利面酱汁在不同的区域也是不同的做法。所以正不正宗不是以个人的口味为标准。当然,对每一个人来说,妈妈做的永远是最好的。对我来说,我的伯母做的也是做好的, 因为那是我儿时的记忆。所以,我也未必会喜欢你妈妈做的。不是你妈的问题, 只是口味不同罢了。各有各的喜欢,毫不碍事。我做了很多也卖了很多,回头的海南顾客都觉得是最正宗的,那就够了。最重要的是这个视频留给我的孩子们,让他们将来有一个参考和传承。
