Excelllent video! Another soak method for beans is bringing the water to a boil, then covering the pot for the beans to be trapped in the heat. Turn off the heat once its boiling, leave for an hour and the cook as normal. It'll cook faster too

Hi, thanks for this detailed recipe! The English name for pitimi (the grain) is SORGHUM, buy I'm not sure if this recipe has a different translation. I am Italian and have zero experience with Haitian cuisine, so I found this recipe very interesting and motivating. I will try to make also the paste you use to stir fry...

I think you are right. The grain looks like sorghum, not millet. The pitimi I have eaten also tastes like sorghum, not millet.

Just ate pitimi for the first time. Amazing. It reminds me of a Scottish dish called “skirlie” - which is whole oats cooked under / inside chicken as a kind of stuffing. Both pitimi and skirlie seem to be inexpensive comfort foods.

Great, thanks! I found a bag of pitimi in my local ethnic market and was looking for ideas that were whole food plant based vegan This is perfect, and though I don't use oil it is easy to use a bit of broth instead. Could you tell us the water/pitimi ratio so I don't just make soup? lol

This dish looks really good. It's slightly reminds me of how Jamaican rice and peas is cooked. Not so much with the stirring while cooking, but with cooking the peas with coconut milk and spices before you add the rice. I'm going to have to find a Haitian restaurant to try this. So I can know what it should taste like before I prepare it.
