Halawet el Jibn is a Levantine dessert made of a semolina and cheese dough, served with sugar syrup flavored with orange blossom water or rose water. Very tasty and delicate sweet. I hope you enjoy it.
For sugar syrup you need:
3 cups sugar
2 cups water
less than 1/4 tsp citric acid
1 tsp orange blossom water
For cheese dough:
1 cup water
1/4 cup sugar
1/2 cup medium semolina ( for those who live in North America i used number 2 semolina )
1 tsp orange blossom water
200 g fresh unsalted mozzarella cheese
For filling:
Ricotta cheese ( I used about 700 g of Ricotta cheese for this recipe)

Unable to find the unsalted cheese....what could be done ??? 😒😒

Unfortunately you need an unsalted cheese, otherwise the taste will be salty😊.

if your using stretchy and melty cheese it will be definitely stretch.

At first, the dough was too soft. then I got more mozzarella. After that, it was too much. The dough sucked together too tightly again. It was chaos. I wanted to cook the recipe for the World Cup final. Unfortunately a disaster :(@@BettysFunCooking
