Halawet el-jibn is a traditional Levantine and Middle Eastern dessert of Syrian origin made of semolina dough and cheese, topped with cream and sugar syrup.
Ingredients
For the sugar syrup
1 cups caster sugar
1 cup water
1 tbsp. lemon juice
1 teaspoon rose water
For the cheese rolls
1 cup milk
1/2 cup caster sugar
1 cup fine semolina
450 g mozzarella cheese
1 tablespoon rose water
1 tablespoon orange blossom water
For the filling
400 g ashta cream cheese, you can use a ready one if it is available in your local store, or make it at home.
2 L of fresh milk and 2 tbsp. of lemon juice, bring it to boil and after the cheese clotted, strain the liquid and ashta cream cheese is ready.
For the decor
Crushed pistachios
Rose petals jam optional

Sugar Syrup
In a saucepan on medium-high heat, add the sugar, water and lemon juice.
Bring to a boil, then immediately reduce the heat and simmer on low heat for 8-10 minutes. The syrup should thicken slightly.
Stir in the orange blossom water or rose water by your choice.
Transfer to a glass bowl and let it cool.

Cheese rolls
In a saucepan on a medium heat, cook the milk and sugar together, stirring occasionally until the sugar dissolves.
Bring to a boil then add the fine semolina, stirring constantly with a spatula until it is well mixed and slightly thickened. it will take around 1-2 minutes.
Reduce the heat then add the cheese and rose water, and mix well over low to medium heat until the cheese has melted and the mixture forms a soft dough.
Allow to cool until the mixture is warm enough to handle.
Divide the dough into 2 equal parts.
Take one first half of the dough and reserve the other half keep it in a warm pan.
Using a rolling pin, roll the dough till 3-4 mm thickness, place the ashta stuffing and roll it, cut the edge with sharp knife. Repeat with all the dough till you get 6-7 logs of halawet el jibn.
cut it for desire size and decorate with crushed pistachios.
Serve halawet el jibn with sugar syrup on the side.

hi dear, I have used brand Nestle cream ( قشطة) , it is thick cream for desserts. You can use any brand which available in your local supermarket

hi Marta, you need to add a thick cooking cream or semi thick to have a soft texture for the filling for 'halawet el jibn' while cooking this dessert be sure to roll it while it is hot ;)

Hi, I love the recept!! But I didn’t understand the ashta part. What is ashta and where can I find it? Is there something similar I can use? I live in the netherlands and I’ve never heard of it.

hi Helin, thank you for your feedback. Ashta (or qashta) it is clotted cream cheese, you add sugar and extra cream for silky texture. For substitute will work great mascarpone 👌🌹

sure, fresh cows milk use in both: stuffing and dough. Tip for the dough, it takes you 5-7 minutes(low to medium heat) to melt the cheese into semolina+milk mixture, be sure you are rolling HOT dough. You may use glows.

hi, Yes, you can, but the taste will be slight different, add to a thick cream some blossom water and and serve with sugar syrup on side. also you may substitute ashta with mascarpone

Wa Alaikum Assalam. dear Mariam, the Cheddar cheese has tooo strong taste. in halawet el jibn we have to use cheese with more neutral taste like mozzarella or fresh akkawi (without salt) or maybe nabulsi. if you have more question, please ask once you try to make halawet el jibn, use the same size of glass for both milk and semolina 1 cup milk 1/2 cup caster sugar 1 cup fine semolina 450 g mozzarella cheese 1 tablespoon rose water 1 tablespoon orange blossom water

I forgot to ask, for making the cheese out of milk, you did not add vinegar? many people told me to use vinegar but I can make it without using vinegar like you did?

to make a real ashta ( which is clotted cheese) you need milk and I do use lemon juice (you can use vinegar aswell). Bcz to help to milk break to whey and cheese we need acid. If you use a lemon it should be real sour lemon or vinegar also fine will work. I did it with vinegar few time also.

bcz some recipes of halawet el jibn also using ashta like a caster base. Using milk + corn starch and sugar syrup. For me this version with freshly made ashta cheese tastier. Another tip can be to use store bought mascarpone

The Ashta didn’t work at all I kept stirring it and boiling it but nothing happened the mil just reduced due to the boiling

Thank you for your presentation. I tried it as described but the cheese after cooked was very sticky. I had to put melted butter on my hand to handle it. After I roll it with the ishta i try to remove it but it is too soft and very sticky. What is wrong with my trial?

Hi, sorry to hear that. If you follow the recipe and added enough cheese than the only issue could be you have to cook just 2 minutes more, first the cheese are melting and getting sticky and when the consistency of halawet jibn dough well be combined and non stocky. see this link, here more clear the process of dough coming together, give it one more try, this dessert deserve it. kzfaq.info/get/bejne/iZ9gY5Vir7O3cYk.html

@@mounirzaccak7357 there is no much matter to add first milk or melt a cheese first, most important to wait till semolina absorb all the liquid (milk+cheese). if you have some more question please ask, so we can troubleshoot it :) once you caught the right consistency the rest is easy.

It is version of ashta more "cheesy", there is a way to make it like Milk, corn starch(to make it more thick), blossom water (rose water) and sugar, so you can you less amount of milk.
