Sharing more of our favorite meals that I make in our off-grid kitchen here in Central Portugal. There are lots of veggies coming from the garden, but we also get to enjoy the fruit our friends grow. Another great reminder that we don't have to do it all.
Recipes I use in this video:
Clafoutis: prettysimplesweet.com/clafoutis/
Tomato quiche:
Pre-made crust
Cherry tomatoes
Onion
Parsley
6 eggs
Splash of milk/cream
Garlic powder, salt, pepper
(soft) Goat cheese
Potato frittata:
700/800 grams of potato
8 eggs
Splash of milk
1 or 2 onions (raw or sauteed)
Garlic powder, salt, pepper
Oregano
Cheese optional (I use a hard sheep's cheese in this video)
Tomato salad:
Sliced tomatoes
Parsley, basil, mint
Salt, pepper, olive oil
Optional: raw onion, minced garlic
Peach chutney:
2 kilos of fresh peaches
Cup of raisins
3 cups sugar
3 cups apple cider vinegar
Chopped onion
2 cloves of garlic, minced
small piece of fresh ginger, minced
Roasted aubergine dip:
2 big aubergines
1 Onion
3/4 cloves of garlic
2 teaspoons ground coriander
1 tin of tomato sauce
Big handful of fresh parsley
Juice of 1 lemon
(Not shown in the video, but I scoop out the flesh from the aubergine with a spoon. Roasting them for about an hour makes this very easy.)
Fresh hummus:
Cooked chickpeas
Fresh minced garlic
Olive oil
Salt, pepper
Tahini
Lemon juice
(If too thick I use water or cooking liquid from the beans to help blend)

New here? My name is Lea and I live with my partner Maarten, our daughter Puck and toddler Bo on our land in Central Portugal. We left the rat race in the Netherlands in 2018 and moved south in our old campervan. Two years ago we bought land in Portugal that had been abandoned for several decades. After lots of hard work we now live in a beautiful yurt and keep ourselves busy growing our own vegetables as well as producing olive oil, wine and honey on a small scale. This channel documents all the different jobs we have to do, and sometimes some nice footage of this beautiful country we now call home.

Hi Lea and family, I love your placid attitude to life, you children are wild and free and happy and you can now finally reap the benefits of all your hard work in the garden. After all that work you can provide meals for your family. Can I suggest that you make the most of your home grown abundance by eating as many of the veggies as you can without peeling the skins off because that is where the most nutrition can be found, I never peel any root vegetables or fruit if the skin if it is edible. I love your flowers especially the red sunflowers, they are new to me. It's lovely to see the kids so interested in the daily farm events they are learning so much from being a part of the daily routines, hats off to the chickens for their daily supply of eggs. I think you do an astonishing amount of work every day and I thank you for your efforts in showing us your life, be kind and gentle with yourself, you are amazing!!!🥰😘🤗💕💕👌👍👍👍🐕🐈‍⬛🐔🐓🍋🍑🫐🍅🍅🍆🫑🧄🧅🍞🥔🧀🥚🥚🍳🥗🧂I do get carried away with the emojis sorry !!

Use the back of your knife to scrape. It will not dull your knife as fast. Crack your eggs on the counter, not the side of the bowl. Good cooking vid! Thank you 😊 💓

Awesome show, thank you. Nice recipes, beautiful children, all lovingly cared for, by a wonderful couple of parents. Puck's humming is a splendid barometer of the contended moments in her life. Easiest way to peel peaches is to put them whole into boiling water for 30 seconds and then put them into an ice water bath. The skins will slide right off. It’s pretty amazing!

Not sure is you already know about this, but there is an effective way to easily.peel peaches. Blanch in boiling water for about 30 seconds, the peels will slip off. There are lots of KZfaq videos that review how to do this. I grew up on a tender fruit farm, we processed a LOT of fruit, including peaches, always blanched and slipped the skins off. Added bonus, you don't lose any of the tasty peach flesh with the peel.

Great video, hard work is rewarded. A long time ago, more than 70 years ago in fact we left Northern Holland and started anew in Alberta. I well remember the very large garden my parents had. In the fall we processed pail after pail of beans, carrots, cauliflower and enough patotes to last till spring. It's was years before I ever ate lettuce and such. When freezing vegetables became popular, hours of canning came to the end. How things chance, mostly for the better as the food served in the video are ample evidence.

What a beautiful quiche. If you want to save money on pie crust (or not have to fiddle with making it) I've been using thinly sliced potatoes for the crust and it's so flavorful! Thank you for these beautiful and inspiring videos. It's a lot of work!

Use the potato peels to make chips. Olive oil, salt, pepper, maybe paprika, toss together, spread on baking sheet, hot oven. Yummie treat.

Thanks for keeping it real. I’m on my own and there are days when I’m just not up to creating exotic or complicated dishes. I do that with pumpkin too, makes it so much easy to deal with than fighting with the knife trying to cut it, the skin just peels off. 🧡 💚 🎃 💚🧡

What a wonderful video, love your cooking skills with recipes, reminds me of my upbringing in Zimbabwe on the farm. We had a large variety of fruit trees, berries including granadela or passion fruit (4 types) avocado. We grew enough pumpkins, gem squash for a year because they do keep well, squashes potatoes and about a dozen herbs. Just watching you reminds me of those times. Keep up the great work to be self sufficient.

About poles or any wood used in the garden, Japan's Famous Yakisugi is a centuries-old technique, when there was still no means of chemical wood protection, which involves charring the surface of wood to make it more resistant to moisture and more durable as a whole, improves performance in inclement weather. Charring the timber, prevents decay/rotting and naturally removes the lignin making it less desirable to parasitic and insect infestation... "today we still can see some old Japanese houses with over 120 years old Yakisugi structure"... even only 10% of 120 years means Less work of replacing any wood structures in the garden ;)

Que excelente vidio adorei todos menus que fez tudo comida saudavel que só faz bem à saude. Como tem muitas batatas faça puré e faz um empadao de carne picada que é uma delicia. Tambem pode fazer jardineira com batatas cenouras nabos e pedacinhos de carne e alho. Primeiro poe a carne a refogar com cebola alho e massa tomate quando a carne estiver quase pronta poe agua depois poe batatas aos cubos as cenouras nabos fica uma delicia é comida portuguesa. Tambem frango assado e arroz para acompanhar. Gosto muito de ver as suas crianças a quererem ajudar sao adororaveis. Muito obrigada por ensinar a fazer esses pratos que sao deliciosos. Great video and I think a seasonal garden cook book would be brilliant 🤔❤️🏴󠁧󠁢󠁳󠁣󠁴󠁿ps all the peach skin in a pot with water and sugar,cook it for a while to get a syrup it’s great to pour over pancakes or anything that takes your fancy

Nice potato dish. My mother used to make it. To speed up the cooking she sliced the potatoes very thinly and layered with egg/milk mixture and cheese. Very delicious. Your garden is doing really well and I love all the interplanted flowers. Gardening has to be fun and not stressful.

Since you are making chutney , you can shock the peaches in boiling water for a few seconds (like it is done with tomatoes), and the peach skins will slide off.
