8 ounces chocolate (we used 70% bittersweet - choose a high quality chocolate you love)

I finally made this yesterday and it was absolutely amazing!!! I thought I took it too far, but the mouth feel was still perfect. I can't wait to experiment with this

I made this for a dinner party and served it with segmented blood orange and toasted hazelnuts. absolutely amazing and a huge crowdpleaser!!!

BTW it's "less-i-thin". There's also a variation in This's book where he suggests adding egg yolk and cooking the mixture to make a flourless chocolate mousse torte. I tried this using a microwave, and the result was fantastic. As soon as I saw the mixture pouf waaay up like a souffle I took it out and let it cool to room temp. It was the most intense chocolate mousse torte ever.

Well, am I happy I found you. I have 5 bars of 75% Lindt that will be melted tomorrow right after I concert into metric. You really didn’t add much volume did you. Not at all like wiping cream. It seams too easy. Cheers from Australia.

Next time I make this kind of mousse I plan to combine it with a touch of whipped cream (and Cointreau). Mostly to add volume and temper the intensity of the chocolate.

its not the exact same recipe though, different ratios HB is 350g of Chocolate and 425g of water

Could you use a stand mixer instead? Like if you use a stand mixer with out an ice water to cool it down or do you need the ice water?

so, chocolate isn't naturally sweet, is there a sharp contrast between the sweetness of the whip creams the bitterness of the dark chocolate?

Could you use raw cocoa powder instead of chocolate bars? Just have it around the house, was curious if that works as well.

No, that wouldn’t work. Almost all of the fat (in the form of cocoa butter, in this case) has been removed in cocoa powder. Also, of course, there are no sweeteners, emulsifiers, or any of the other things like milk solids that make chocolate taste so good.

So I just went out and bought 8 ounces of chocolate at my favorite chocolate shop-Dandelion in San Francisco.Started to make this and I heard you talk about the emulsifier in the chocolate making the recipe work. I checked my chocolate bar and all it contains is chocolate and cane sugar so I’m thinking this very expensive chocolate I bought for this recipe won’t work...?

My son and I have tried this the last 2 nights, BUT with different chocolate one night and last night with butterscotch. Neither worked )o=;. It stayed liquid. We DON"T have metal bowls only ceramic bowls. Could that have anything to do with it?

No, ceramic works fine. I also failed my first time on this. The thing you're probably doing wrong is the time. Whisk it vigorously for about 4 minutes. You will have to switch hands muliple times because its a real workout, but its worth it.

Does this mean that this mouse isn't meant to be stored? Unlike traditional mousse, it melts in too warm temp and probably stiffens in the fridge no?

Hmm, soy lecithin is not an ingredient in really pure chocolate, that's probably not the reason why it binds with the water. I've done it many many times using chocolate that's only cacao and sugar........

OMG! I have to try this recipe coz if you ever tried the traditional chocolate mousse recipe you definitely know how much butter, sugar and egg whites..., etc. you have to put in. IT'S SO FATTENING!

I prefer the avocado/good cacao/honey or maple syrup mousse over this. It's much more mousse like and much easier to make. Plus it's healthier.

This was painful to watch. PLEASE improve your technical vocabulary where it is important. Explaining why chocolate doesn't seize when the ratio of water is very high needs much better prep. You aren't doing your viewers any favors with that.
