I am very experienced in preserving fruits and vegetables, but I've only canned meat in a soup once. I'm interested to try it out sometime soon.

Goya has a ham seasoning in boxes of little individual packets, and it is so good! Inexpensive too.

I canned 7 qts of ham cubes this morning . They all sealed & look fabulous ! First time ever . I plan on using these in ham,stringbeans, & potatoes, a favorite of my hubby's ! Thank you !

Our family of 3 is off kilter... child can’t eat beef and I can’t eat ham. Hubby eats both. Soooo glad I found this

I save up my ham bones and cook it in my crock pot with a big onion and a couple stalks of celery all night and use this broth to cover my ham and if I extra its soup or I can it.

I think you hit on a real deficit - How to use the canned food in meal preparation. For things like fruit, jam, jellies, pickles, it's intuitive. But for meats, it is not always obvious. Would love to learn more about that! Using the ham (chicken too?) for fried rice is brilliant. I have been canning for years, but always end up with stuff on my shelf and wondering how to use it.

Had a Mirro pressure canner for 35 years. Worked well always. Now I have an All-American, works just as well. I would love to see you use the canned products in meals.

I have an All American Canner and a Presto canner. I love my Presto canner and use it more than the All American. I love the idea of canning ham and want to try it. I can chili, beans, soups and chicken, really want to try canning ham now. Your kitchen looks fine.

A good source of ham base or beef and chicken, is www.Penzeys.com . They have stores around the country and they ship all over. Great spices and gift packs

I see that you canned this ham four yrs ago. I'm interested to know how it turned out and whether you would can ham again? I've seen other videos of people canning hams. Some have thought that only certain hams can be canned. Have you heard anything? I would like to can ham but I'm afraid that it will turn out to be dry. I would like to see any comments about this. Thank you for your help..

It's great for soup, deviled ham salad, and casseroles. I have canned it many times. Sometimes it turns out darker than other times but still tastes good.

I'd like to can an uncooked ham.....I feel canning one that has already been cooked will cause the juices to come out, leaving the ham flavorless.

Cooks ham is great as it has less sodium in it than other hams. FYI, China now owns Smithfield. I won't buy anymore Smithfield products. I have never canned ham, but I'm going to now that I saw you do it! I use an All American Canner and I Love it. I have two 921's. I want to get a bigger one so I can double stack quarts. Good for when I am canning spaghetti tomato sauce.

Hi excellent video you explain the steps very clearly so anyone can understand and get it, I have water bath can for a long time but not pressure canning so this video is right on time. I am always getting wild game that my friends bring me and I wanted to pressure can some so that it want get freezer burned before I can eat it. I plan on getting a presto weighted caner from Walmart, because I an just started out when I get really good at it I might invest in another type caner.

I keep mine at about 12 and clean up. As it cooks it may get hotter but it giggles at 15 and I just turn it down a bit. I have a propane stove.

Thank you! I believe my Presto calls for 3 quarts of water it's in the instruction manual if you got an instruction manual with you or pressure canner it should say the approximate amount of water to put it.

What does the canned ham actually taste like? I'm worried the flavor will cook out of the meat during pressure canning. I don't have ham bouillon so I would have to use plain water or boil a broth using the bone. All I've got is pre cooked bone in spiral ham and I just want to know if it's going to be worth my time and effort canning it at all. Thank you.

I was told that pressure canning ham was a no no. Something about smoked hams or nitrates. Is it safe? Because I'd love to ham on the shelf!

I think you could still can them. I recommend trying a small batch first to see if you like the flavor and texture.

Ham is on sale in my area this week,so I found you by chance while looking for ham canning videos. So 12 hour shifts, and a night owl. Are you a healthcare worker, by chance? I worked as a RN for many, many years. Lots of night shifts, lots of 12 hour shifts, night and day. I’ve been retired from nursing for nearly 20 years and my night and days are STILL messed up! Its actually easier to can pork butt/shoulder. You can raw pack 1inch cubes tightly in a jar with 1inch headspace, no added liquid, 1/2 tsp salt for pints, 1tsp salt for quarts. Look up times and pressure for your altitude on the NCHFP website :)

I just bought the presto 23qt canner & used it for the 1st time yesterday. The manual said 3qts of water, plus there's a line on the inside wall of the pot to show where the water goes. Which I found it to be way off. Good luck & I love mine

I understand that the ham becomes darker if it has dextrose in it. Most hams have it unless you buy an expensive one, which I'm not really willing to do for canning. My canned ham looks the same as yours. Great video. 😁

I would love recipes using my canned meat. I have never heard of Ham .base, we have a Cash and Carry here in Sacramento going to go there today Never thought about canning ham will be doing that soon.

They come in the ball canning kit. I often use a chopstick to debubble though. Just use a non metal utensil of some kind.

I have two turkeys that I am going to raw pack. Doing Turkey this way "raw" assures the Turkey is tender and moist. Pressure canning cooked meats can leave meats dry and tough.

The alternative tp "pressure" canning is "water bath" canning. Are you saying that you raw pack and water bath can your turkey? Or did you mean that you raw pack and pressure can without added liquid? Meats, according to all the sources I have seen, must be pressure canned--but you can choose between hot pack with cooked meats and juices or raw (cold) pack with very little, if any, extra liquid.

0 to 1000 feet above sea level uses 5 pounds to pressure can fruits . We use 10 pounds for meats and soups . I am in Florida 11 feet above sea level .

It is virtually impossible to find ham base in grocery stores, I’ve only ever seen it in restaurant supply stores and grocery outlet stores. Due to that, I’ve always made my own ham broth with smoked hocks and veggies.

If this really works, and the ham tastes good after a few years canned (which it probably should) I'd like to empty out all the ham pieces I have frozen in my freezer, to free up space anyway. For some reason, I've been thinking of....all I'd lose if something horrible happened, and we were without electricity for any length of time. I'd lose so much I shudder to think of it

I was told that the fat being left on the ham like this causes rancidity... What is your opinion on this ?? Thanx

Never had fat go rancid in any meat I've canned. Including the "slap my hand no-nos" like this ham and bacon. I actually think the fattier cuts of meat like pork shoulder and beef chuck roast can up better than lean meat. Lean meat comes out very dry textured. I've eaten jars of meat I've canned 6 years ago, perfectly fine. Stored in a cool dry place, rings off. Never lost a seal on meat either. Corned beef season is now and that is amazing home canned! Not "approved" though. So it's at your own risk :)

It should jiggle 2 to 3 times per minute, or you will have water loss.

I’ve always done 70 minutes for meat at 10-12 pounds of pressure, but I am 25 feet above sea level, there are adjustments for elevation that have to be done. For ham, especially when you put ham broth in with the ham, the salt level is high, which is an added layer of safety since salt is sterile and sterilizes the meat.

Just found your channel & Hope to try your recipes & watch more videos as long as background noise is more controlled. I need to close out & not continue watching videos with to much background noise--just to annoying.
