If you put water in your canner and a generous toss of cream of tartar, bring it up to pressure..turn it off..let cool..it will strip out the black in the bottom of your canner. It will look like new.

Yes, ALWAYS use a rack of some kind in the bottom of a canner. Can be a folded kitchen towel. Can be a layer of jar rings sitting right side up to support the jars. Rapid heating of the bottom of the canner because it is in direct contact with the stove also means jars in direct contact the the canner heat as rapidly too. Glass can't take rapid changes in temperature.

Hi ,This is Mrs. OkWoodsman, Did you have the grate in there to hold the jars above the surface of the bottom of the pan? If not , That'll bust 'em every time.. and also I believe you opened the canner too soon. If you don't let it cool naturally long enough (near room temperature) before you open it, they won't seal right and you'll get broken jars too sometimes. (Edit: They shouldn't still be boiling in the jar when you take them out.) We just clean up all the other stuff (after the proper cooking time) and walk away to go do other things for a few hours. Don't try to rush it. After all, now all you have to do is take them out, wipe them off, and set them overnight somewhere, and clean up your canner too, then put the jars of food away next morning. Edit again: Don't wait for the water to boil before you put the jars in there, warm it up good to match your jars temp, then let it finish coming up together or that'll break em too.

Same here with me when I was a little girl (65 now) My sister was cooking pinto beans and we heard the same thing and ran into the kitchen beans everywhere we both slipped and fell in the floor we laughed about it for years but I too was scared to pressure can I have been canning pressure for about 10 years I canned waterbath pickles and jams after I got married my mother-in=law taught me but she did not have a pressure canner or know how to use one. I learned to pressure can from youtubers Linda's pantry and Noreen was my first experience of canning then I was hooked LOL I now can my own dog food and own an all american that holds 20 quart jars plus one that holds 7 my first canner was a Presto like yours I never liked how it came up to pressure even after buying the jiggler that had 5-10-15 pounds of pressure I use 10 for my area and the canner from Amazon only came with the jiggler you have it is 15 only. SO after I started canning my own dogfood for my rescue furbabies I invested in a Granddaddy AA LOL

I like the way you did this. My canner is similar to yours. Its a hand me down thats quite old. It has both a trivet and a canning rack. I use one or the other on the bottom. It's important jars are not touching bottom of pan. I don't let jars touch in canner either, tho I've seen others pack them in. You might try spacing them like 5 spots on a dice. I do think I'm gonna can a batch like yours with some old Anasazi beans that need to be used up. I'll skip carrots, since growing up we just used onion and celery. Dad liked a kick ad added his hot pepper vinegar at meal time.

really enjoyed your video. I am thinking your jars broke due to no bottom rack with lifts up your jars from the bottom while cooking. Lets water flow underneath. Also when I can if I don't have atleast enough jars to cover all of the bottom of canner, I use empty jars filled with water as support to other jars. I hope that helps. Really nice video. You cannot use a pressure cooker for canning. It needs to be a pressure canner.

Hello... I canned ham and bean soup yesterday. My jars ended up with a very light film of oil on them. I read that this is normal and to just wash my jars off when completely cooled. I would feel more comfortable having someone experienced answer my question. Thanx

Could you mix the ingredients instead of layering? Like measure it out and mix prior to putting it all in the jar.

I'm scared to use a pressure cooker! I've done some hot water canning, some success. I need to do more, then maybe, try a pressure cooker. I wanted to try one of the new electric ones, but it says you can only hot water bath in it, not pressure can. Thanks for the video.

Minerals in the water will cause the staining. Some say adding some vinegar will lesson that. I don't know, but it does keep the jars from turning cloudy on the outside from the minerals. Normal for the canner to get discolored.

Maybe the "smart alec" meant to fill the jars clear up assuming the beans would be cooked--even if she knew what you were talking about (using them dry)--sometimes our brains go back to say what we always did and often--we don't even hear it when we do those things. I do that anyway. It's not intentional. Maybe she wasn't being nasty either.
