I used the same recipe and have them on the shelf. I always fry them for breakfast, never thought of smashed. I tried them for dinner tonight, pretty tasty.

Yum! I have also added a tablespoon of beef n onion soup mix with water over the potatoes with carrots. They turn out great. They taste like I cooked them with a roast. I have to credit The Homesteading Housewife for that recipe. I'm planning on useing turkey stock with this canning recipe. Thanks for the video.

Carol, you are the best!! I canned my organic home grown potatoes per your video instructions a month ago & I just made the world’s best mashed potatoes per this video instructions. I love mashed potatoes but was never able to eat at restaurant/home dinner because it is too salty for me. I adjusted the salt amount to my liking (like 1/8 of recipe) and followed your recipe. Soooooo delicious!! Thank you Carol 😊

You can use the startch in the potatoes as yeast or "rise" in your breads.

I canned these yesterday and one jar didn’t seal so i cooked them with the gravy as per your video. These were very good!! Potatoes were firm, not too soft. Broth was a bit salty so I will cut back on this next time. Hubby loved these! Now that I know where to find my white potatoes i am going to can more. Thanks so much!

if you soaked your russet potatoes overnight you will find that they have very little starch when canned

I watched the canning video last night and then today while at Walmart I bought 4 bags of white potatoes because they were marked down to $1.76 for 5 lbs. Can’t wait to can them!!! Thanks Carol. 😘😘😘

Where are you located that your Walmart carries white potatoes? My Walmart doesn’t carry those, but they carry every other fancy kind

I don't care about the starch when canning potatoes. I use it in soup. Good info on gravy and technique. I use chicken, Beef or turkey, even ham stock can make some good gravy, milk or cream is also a good choice.

Thank you for this. I made some last night. I never tried because I heard if you tried to make mashed from canned they would be gummy. That is not true. Can't wait for this years potato harvest. I wil be canning more.

Thanks for doing a "how to use canned goods" These look wonderful. Old Alabama Gardner just did a video on how to use canned potatoes and canned chicken. His program has some other great ideas too. I just want to thank you for your canning and cooking videos. You do a clear explanation. We are canning "snow free" chicken in a couple of weeks when my step daughter comes for a visit. Oh, cool weather is so wonderful to can in. I am back to sewing some now, have had problems with vision in recent times, and am making cloth covered journals. I keep some of my youtube recipes in the one I keep in my kitchen. . Anyway, I would like to make and gift one to you. Yours will be red for sure. I just need mailing information to you or someone that you would be comfortable in posting their mailing information. The only canned potato's is for potato soup. This looks wonderful. I just did ham broth and chicken broth is in the fridge so I can get the fat off. I have beef broth canned also. I am gonna try this. How do you think they would be for hash browns? We like to cook outside over the fire for breakfast when it cools off down here.

Rose Jarman if you use white potatoes as I did here, they would be great for hash browns. I was surprised how much texture they had after being pressure canned. Nothing like campfire cooking. These would be great in your ham broth for potato soup 😉😍😋

How do you not get that “tin/metal” taste when canning them? Every time I’ve tried canning potatoes they have that weird taste. Have you ever had that experience? Thank you for all your videos 💖

Deep South Homestead on YT said don't use aluminum pots or bowls for corn because of this. Use stainless steel or plastic when prepping.

Can you roast these potatoes as well? Or are canned potatoes meant for mashing/soups?

You can roast or fry them. Just reduce the cooking time 😊

I have a question on what type/brand of white potatoe did you use? Because I thought that Russets were a white potato. Thanks!!

Natasha Habig I know it’s confusing, I thought the same thing. Russets are considered a starchy potato and break down during canning. What I used is labeled as “white potatoes” and are considered a waxy potato. Red skinned potatoes will work well also. You’ve probably seen white potatoes a million times at the grocery and just overlooked them, I know I did lol. They are more round in shape and russets are more oblong if that helps but they should be labeled as white potatoes.... great question 😊💕

Hi, I've made mashed potatoes twice now from my canned potatoes and they come out gluey. The first time I used milk and butter, the second time I used my usual sour cream and butter. Both times they came out with a glue like texture. They tasted fine, but the texture wast off putting. Any thoughts?

They aren’t the same as boiling from fresh. You might try a different potato variety

Thanks when I was younger I canned some red potatoes and they were grainy. So I wanted to make sure they weren’t.

Gwen Kaiser that’s interesting... many have said they have great success with red. I’ve only used white round and they’re not grainy. That’s good to know 😊

Gwen Kaiser if you canned them according to guidelines for canning potatoes they should be fully cooked. I’m wondering if it was just the potatoes. I’ve had russets that were grainy just cooking normally...

I really, really, want to can these potatoes. Question, is there any other name used for these white potatoes? I have only seen red, russet, and Yukon Gold here in Iowa. It would be helpful to know if there is another name for these white potatoes to ask for. We do have Sams and Costco here also. Could you give me advice where to look for them?

June Swanson hi! You’ve probably seen white potatoes and just not realized it. They’re usually labeled “white round potatoes” and I usually find them near the red potatoes. Red potatoes are also a great choice. Russets don’t work well because of their starch level. Yukon Gold can also fall apart when canned instead of holding their shape. I hope this helps 😊

Red and white potatoes don’t keep as long raw as russets or Yukon golds this is because of the starch.

I've canned up 120 lbs potatoes so they don't grow eyes,get mushy an for handiness..also yearly prices spike so canning them i will have on hand regardless of seasonal price hike.

Try soaking your patatoes for 15 minutes rinse them repeat 3 times this will remove the starch and they come out nice with no starch at the bottom on Russet patatoes

So what exactly is a white potato? If a russet potato isn’t good for this, and to me it’s a white potato, what is a white potato specifically?

White potatoes are labeled just that. They are considered a waxy potato. Russets are starchy potatoes. Russets can be used but should be soaked to remove some of the starch prior to canning. Red potatoes or yellow will work as well. However white potatoes are what is recommended.

I use Russets but i soak them for 2-3 hours changing the water till it’s clear and then can and they are fine
