Ben Lepsch it doesn’t remove juices if you dry brine for long enough. Salt pulls moisture but the moisture goes back in after a few hours causing your steak to be seasoned all the way throughout.

You are inspiring me to pick up some of this equipment and try new techniques to help me feed delicious food to my family at home. I also can't thank you enough for showing how to make a BBQ sauce... I have been wanting to make my own for a very long time now, but didn't know where to start. I know it's going to be good since I know that home made rub of yours is already amazing. PSA to anyone making Guga's BBQ sauce shown in this video: I just made his sauce, and it is good! However it is a bit bland, so I recommend you add 1/2 cup of white vinegar or apple cider vinegar and some extra salt. This will make the sauce amazing

Okay I'm a pretty good chef and even built my own sous vide machine so I usually nod my head along with you. But leaving salt out of rub and adding it separate? Great tip i had not thought before. Nice video!

Hey Guga, I’m a big fan from Montreal. I like the quality of your videos and your culinary tips with sous vide. I visit Florida each winter and I like to eat ribs at Flanigan’s. I’m curious to see a similar test with the ribs from this place. Cheers and long life to Sous vide Everything.

Can ya do a test of removing the membrane vs scoring the membrane? I've always found leaving but scoring the membrane left more juice and flavor and you can't tell its even there.

I respect so much the table manners that Guga has I mean he doesn’t only chews with closed mouth he also put his hands on his mouth when he speaks if he was eating something and some might say that he shouldn’t talk with an opened mouth but this is a video to review food he has to talk like that sometimes 😅

Made my first sous vide recipe last weekend. Took some iberico rib cuttings with guga's rub, sous vide them for 24 hours at 65°c then glazed them with spicy bbq sauce and finished them on the grill. It was amazing. bones literally fell out

I just got my first sous vide machine last week and I've been having a ball cooking with it. I've done prime sirloin two different ways and a big old halibut cut. Both the steaks were CLOSE to the best steaks I've ever had, but I have a LOT to learn. The halibut came out of the bag looking perfect, but I was really ham-handed during the searing process; it TASTED great but looked like a gruesome aquatic murder scene. Here's to learning new stuff! I always eat in shorty’s in the past when traveling to Miami, and it was really good!! I imagine they loose something in the delivery. But i am really looking forward to trying your method Guga!!!!

Exactly this. I grew up eating at Shorty’s. In house is way better and you get all of the sauces on the table to add as you please. Their fries are awesome in house and their coleslaw and corn are incredible.
