Ingredients (about 30 cookies)
Cookie dough
2 cups and 3/4 cup (350 g) of all-purpose flour (plus have 2 -3 tablespoons of flour on hand if the batter stick to your fingers and on the kitchen counter)
1 cup and 3 tablespoons (150g) of powdered sugar
1 tablespoon of vanilla extract or vanilla sugar
Zest from 1 Lemon
A pinch of salt
2 eggs
1/3 cup and 1 tablespoon (100 ml) of extra virgin olive oil
1 tablespoon of water
Filling and topping
1/3 cup (100 g) of raspberry jam or another jam of your choice
1-2 tablespoon of powdered sugar for dusting
Follow the video instructions.
Preheat the oven at 350 F (180 C).
Bake the cookies for about 20-22 minutes, depending on your oven.
Let them cool for a few minutes, then move to a cooling rack.
Dust the cookies with powdered sugar.
Enjoy with your favorite hot drink; coffee, tea, chocolate...
