Store the sausage in paper form in the refrigerator for 5-7 days. It can stay in the freezer longer or vacuum it.
Ingredients:
Pork - 1.5 kg
Beef - 500 gr
Pork belly or lard - 500 gr
40 g salt + 5 g nitrite salt (6.25%) or (45 g nitrite salt 0.5-0.6%, do not add the usual)
Ground black pepper - 1 tsp
Cardamom - 0.5 tsp
Dried garlic - 1 tsp
Sugar - 1 tsp
Allspice - 0.5 tsp
Milk powder - 30 gr
Ice water - 250 ml
Natural pork casing 3.5-4 meters 33-36 mm
Bake in the oven at 80-85 ° C until everything is cooked. The temperature in the sausage should reach 70-72 ° C.
