I served some pizza to a friend who stopped by the other day. He asked where I got it, or if it was home-made. I said home-made. He said the crust was excellent and better than any local or chain restaurants. I told him and the neighbors about you. You are the Prince of Pizza Vito!

The weight of dough to sheet pan size is genius! I've been making Sicilian or in the US Grandma pies and it's hard to get the thickness right every time. Grazie!

Yes, this was a game-changer for me! I always struggle when I make bread as to how much do to put in a bread pan. I usually don't put enough in, and my loaf comes out too small

I loved this video.I just got home from work, and I was enjoying two of the five pizzas I prepared last night.I heated them inside the air fryer to maintain the crunchiness. The microwave is no good for that. It will make it look like gum, Congratulations

I give you some advice that all pizzerias apply here in Argentina, after letting the complete dough rise and separate it into buns to let it rise again, we give the dough a third proofing of between 30 min to 1 hr prior to the cooking in the mold where it will be cooked. And then the precooking is done as you did, here in Argentina they call that prepizza, to finish with the cooking. a gigantic greeting! you are my great teacher and my mentor! You are very important to me, thank you very much for everything you do, especially for your energy, charisma, sympathy, you are an amazing person!

Very similar process to the Detroit pizza although I think the hydration for this dough is higher. I love it and am going to try it with the next one. : ) Thank you and bless you for sharing this wonderful recipe with all of us.

@@vitoiacopelli i think the hydration given in the video is wrong i made the same dough twice once with 00 dough and the other time with a local flour which had more protein and twice the dough was way too hard to handle the dough was not like the one i the video i know it depends a lot on the flour but I don't think his dough was 80% hydration

Ciao Vito! I am a Canadian Italian. My mom was born then came over to Canada . I was in Italy a few times and I love all pizza would love to open my own shop! But not a master like you. @@MBailote I use Caputo 00 pizzeria flour its the blue one. Use a lot of flour when you are handling it just like in the video. Also super gentle when pressing it out to keep as much air in as possible.

nice way to do it, but normal household electric ovens dont have temperatures going up to 400°C, here in switzerland 250°C is more the rule

Very costly to get those ovens in North America due to UL Listing... but you can get one shipped at very high cost. Also, make sure you have 220V outlet

Geat video. I worked in a pizza shop in central PA run by a Clemente. Vito reminds me of "Pete" who came to college nearby and worked with me on the busy weekends, until he taught me how to curse back to the boss in Italian and got he got fired. I am going to start making some Sicilian pizza at home, I cannot find any on the west coast.

Never ever put oil or butter or any fat on a burn! It keeps the heat in. You must put it under cool water. That’s something we learned here in the USA since like 1985... Feel free to use aloe Vera or Vaseline (petroleum jelly.)

Stop the machine if higher. Fridge temperature: not less than 43^F Oven temperature, 480 to 570 F, if possible, otherwise MAX. Enjoy.
