Do-it-yourself sausage cooked in the oven. And most importantly, you know what it is made of.
Required ingredients for cooking:
1.5 kg pork
500 g beef
500 g brisket or lard
1 tsp ground black pepper
0.5 tsp allspice
0.5 tsp cardamom
1 tsp dry garlic
1 tsp sugar
30 g dry milk
250 ml ice cold water
40 g nitrite salt 0.5-0.6%
shell diameter 45 mm 2-2.5 meters I got six loaves of sausage after stuffing them with minced meat.
We hang the formed loaves for draft, and hold for 3-4 hours at room temperature. After the minced meat is deposited, place the sausage in a preheated oven to 90 degrees for roasting. Fry for 30 minutes. Then we lower the temperature to 80 degrees, put a container with hot water on the bottom of the oven, insert a culinary probe into one of the loaves, and continue cooking until the temperature inside the loaf reaches 68-70 degrees. We cool the finished sausage for 5-10 minutes under cold running water. Place the cooled loaves in the refrigerator for 24-36 hours to open the spices. Bon Appetit everyone!
