This amazing old school shoofly pie with homemade crust, molasses filling, and buttery sweet topping is made with few ingredients that you will find already in your cupboard.
Ingredients for this recipe:
• 1 homemade pie crust recipe
• 2 cups all-purpose flour
• ½ cup packed light brown sugar
• 1 teaspoon cinnamon
• 10 tablespoons unsalted butter
• ¼ teaspoon sea salt
• 1 ¼ cups light molasses
• 1 ¼ cups hot boiling water
• 1 teaspoon baking soda
• 1 beaten egg
Serves 12
Prep Time: 20 minutes
Cook Time: 40 minutes
Cool Time: 90 minutes
Procedures:
1. Preheat the oven to 425°.
2. Add the flour, brown sugar, cinnamon, butter and salt to a large bowl and cut in together using a pastry knife until the butter is about the size of rice. Set aside.
3. In a large heat-safe bowl add in the molasses, boiling water, baking soda, and beaten egg until completely combined.
4. Transfer the mixture and pour it into a pie crust molded pan.
5. Generously sprinkle on the streusel over the top until it is completely covered.
6. Bake in the oven at 425° for 15 minutes then at 350° for 20-25 minutes or until firm in the center.
7. Cool on a rack completely before slicing and serving.
8. You can add optional toppings such as whipped cream or ice cream.
Chef Notes:
Make-Ahead: You can make this pie up to 2 days before you slice it.
How to Store: Once the pie has cooled to room temperature, cover with plastic and keep in the refrigerator for 7 days. Likewise, you can cover and freeze for up to 3 months. Thaw for 1 day in the refrigerator before serving.
Most pie tins are 9” and this recipe will fill it all the way to the top. If you are nervous that it will overflow outside of the pan, then reduce the recipe by 25%
I prefer to use light molasses because the flavor is not as intense and also has less bitterness.
You can make the streusel topping in a food processor instead of using a pastry knife.

New sub. Yr shoefly pie recipe was so much easier than others online. No karo syrup(which in new Zealand I'd never heard of), u have a simple, easy, but oh so great, way of tutoring. Im a chef wrking in a mental health home for 30 people, so i need faaaast, tasty recipes. You nailed it Sir! Thanku. Ps. The pie crust recipe is going to be my go to for everytime i need pie crust. wow - this was amazing everybody loved it thank you! and yes i would suggest using 1/2 stick of butter mine melted to the bottom of the oven and smoked my whole house :( anyways loved the recipe thank you!

Your pie dough did not need to be wrapped and refrigerate before rolling ... blew me away. I actually went back to make sure. Interesting pie. Thank you for sharing.

Yes here in Amish country PA still my fav pie yummy. But only dark brown sugar & molasses for all cooking. Plus yes , deep dish for all our pies here

Of Pa Dutch heritage and have not had good shoofly pie since my grand mother passed many years ago. This looks like what she made and I will be trying this recipe. Her recipe was a handful of this, a pinch of that, nothing that was a measurement. Thank you for the recipe.

I like strong flavors. I wonder if you can substitute sorghum syrup in place of the molasses, they are similar but the sorghum syrup is thicker and sweeter, I think

I just tried making the pie crust I had to add more than 3 tbs of water to get it to the consistency were I can handle it. I was able to transfer it to the pie plate so it looks like yours and not crumbly in the beginning when I tried to bring it together. tomorrow il do the rest

Maybe someone said this but it says in your recipe 1 tsp of sea salt when it should be 1 tsp cinnamon and 1/4 tsp sea salt, correct?

Made this very same recipe today in a large deep dish pie dish and every bit of the filling bubbled up and literally poured out of the pie plate!! Now I have a huge sticky gooey mess to clean up in the oven and no pie. The elements actually caught 🔥 I’m an experienced cook so don’t know what happened. I followed the recipe to the T except where the ingredients were mixed up in the video with the salt and cinnamon. Figured that was a mistake!

I wonder if I could use beef lard, as I don't have bacon fat. We can still buy lard in New Zealand. 😲🇳🇿

I never tried pie crusts . know this is a wet bottom method I have heard of other methods. maybe this will be my first pie crust attempt. I love making quiche and the pie crusts are just not deep enough in the stores.

I like your recipe for the filling simply because I need to stay away from corn syrup. But there is no way I can use your pie crust recipe; I am allergic to all pork products, whether it's the meat or the lard. Instead, I do a pie crust using very cold butter. I am not sure if I have dark brown molasses or not. What brand of light brown molasses do you use?
