Soft, Fluffy on the inside Crisp and Scrumptious on the edges - Sicilian Focaccia Pizza - a well deserved treat. Enjoy!!
DOUGH RECIPE:
4 cups all-purpose flour
2 tsp salt
2 tsp active dry yeast
1 1/2 cups warm water
1/4 cup olive oil or up t 1/2 cup
1 tsp sugar
METHOD::
In a large mixing bowl, whisk together the flour and salt.
In a separate bowl, mix the yeast, warm water, olive oil, and sugar. Let the mixture rest for a few minutes until it becomes frothy. (Or you can add all dry ingredients in the bowl and add mixture of olive oil and water as shown in v video.)
Add the yeast mixture to the flour mixture and mix until you have a smooth dough.
Knead the dough for 10-15 minutes until it becomes elastic. You can also do this in a mixer.
Place the dough in a greased bowl and cover with plastic wrap. Let it rest in a warm place for 1-2 hours until it doubles in size.
Preheat your oven to 425°F (220°C).
Grease a baking sheet liberally with olive oil and place the dough on the sheet. Stretch the dough out with your fingers until it's evenly distributed over the baking sheet.
Use your fingertips to make small indentations in the dough. You can add more oil as you do this. Drizzle more olive oil over the top and sprinkle with rosemary and coarse sea salt.(If you are just doing focaccia bread) If you are doing Sicilian pizza, make whatever toppings you like and put on top of dough.
Bake for 25 minutes or until the focaccia is golden brown.
Remove from the oven and let cool before serving.

TIP: When pushing out dough on pan it will resist you. A good trick is to turn the door over as you are spreading out on pan. You can also stretch the dough at the corners and let it hang on the sides of the pan. The Dough will then spring back and fit on the sides of pan.
