Inspired by "Galette" I made it using homemade puff pastry dough, with a puff pastry dough method that's easy and different from what I've made in previous videos and a filling recipe that I've changed from the original galette recipe.
300 grams of all-purpose flour
60 grams of butter
120 grams of water
1 tsp salt
1 tbsp sugar
1 egg yolk
150 grams of margarine/butter specifically for lamination of puff pastry.
Filling ingredients
1 egg
2 yolks
50-80 grams of powdered sugar (according to your taste)
pinch of salt
35 grams of powdered milk
45 grams of butter
40 grams of dry grated coconut (coconut flour)
1/2 tsp vanilla
Bake at 200°C for 15 minutes, then 160°C for 20 minutes (depending on the type of oven you use).
