I have precooked shredded round roast in my freezer and can't help but think how yummy this would be on top after using the broth to make gravy! Thanks Rachel for this I just bought 50 lbs of taters yesterday and was going to can most of them plain but now I will be doing some as soup!😊

I really like this video on creating can-able recipes. Teaching people how to craft a safe canning recipe without having to follow a recipe in the blue book etc word for word is something I don't see much of. Lots of people are weary of going off script with a recipe and scared of botulism as a result. A video on how to with basic deviations would help lots of people, including things like changes at high elevations, ingredients and uses like you did here. Great video.

You can use instant potatoes to thicken the soup . Bring to a boil and stir some in . Cut off the heat . I use a whisk to mix the instant potatoes as I pour them in

I have 100 pounds of potatoes left to use from 200 pounds that was given to me, I have canned 14 quarts of potatoes and now some will go into potato soup making this recipe and then cut and freeze the rest. Thank you everyone.

Hey Rachel, great soup idea it uses many of the items you are not sure how to can all by themselves. I recently found a recipe for using green tomatoes. I found a few recipes for green tomato curry. I took all the best ingredients from each and the best cooking techniques step by step and came up with my own ingredient list, spice mix list and my own methods. My wife said it was a first time hit don't change a thing. This is rare because she is picky. Usually it takes two or three tries!! I did make enough for supper two nights and then 9 quarts which I canned in the pressure cooker. Now it is ready for a fast supper some meat and rice our and serve (9) times. This is in part thanks to watching you with the giant cooker I bought 2 of them at goodwill for $5 each they were barely used musta been a wedding present for some folks that do not cook or have small families. Whenever I have broth left over from something I've canned, I freeze it in an ice cube tray then pop the cubes into a ziplock freezer bag. I'm going to cook with it, and so far my best has been French onion soup broth.

I made potato leek soup today…. Curious about adding carrots, I’ve never seen that done before. I use instant potatoes to thicken my soup your broth jar could still make it soup. Just add noodles, maybe chicken

Another awesome canning recipe, Rachel, Thanks again! It was a disaster year for my garden(we just moved to our original homestead so the kids can have the big farmhouse that we were living at) and goodness, so much work to clean up the yard after renters and no attention. Big plans for the upcoming year for the new garden space! I sure missed having my garden but bless her heart, my MIL told some relatives about my disaster and "boom" my kitchen was bursting with gifted fresh produce.

Speaking of creating your own recipes based on what you know is safe. I have a question and I've tried to reach out to few people on Facebook and can't seem to get an answer from anybody! I wanted to can whole berries not just one kind but mixed. I couldn't find a recipe for what I'm making so I kind of created mine own based on what I could find that was safe. Everything I found said for any kind of berries basically this will work so I used a mixed berry blend with blueberries, black and raspberries then I added cherries because why not. Anyways it was 3 lbs of berries 1 lb of cherries They said cover the berries and bring to almost a boil which ended up to be like 14 cups of water which was crazy so I was like lemon juice should help if this is to much water so I added 1 1/2 cups of lemon juice and 1 1/3 cup of sugar Filled the jars half full of the berries then topped with the juice up to 1/2 head space. I filled as many jars as I could half full of berries but still had tons of juice left also so I did the same filled it to 1/2 head space. Water bathed it all for 15 min 😮 All the recipes I saw brought there blueberries to almost a boil then added them to there jars and topped off with hot water and water bathed canned with no lemon or anything just plain water but I used the water I had brought the berries up to almost a boil and added that extra acid from the lemon juice.

I have chicken broth on low in my giant roaster so this is getting my thoughts going. Thank you for the inspiration. I didnt want to just can chicken broth as I already have 3 cases of quart-sized jars. I have fresh carrots I was going to can with steak in a jar meals but my girls wanted the steaks for home-made fajitas. I also have celery. Eureka!

The tradition at the restaurant I worked at was Potato soup on thursday and Clam chowder on Friday. Don't know that I'd add carrots fo the meal starter if I was heading that direction.

Question! Rachel, you said the ingredient with the highest cooking time was the onions, but I saw you adding chicken broth. Is not the broth the one with the highest timing? I have been wondering how I could get away with canning my potato soup and oh my gosh this is going to happen it is so close to my recipe and for my thickener I add potato flakes so the cream and potato flakes and ham will get added after its canned but I have everything in my pantry minus the potatoes right now I'm so excited. I can potatoes and leeks together, then when I want soup I simply grab two, one gets immersion blended and one doesn't, it makes the best creamy potato soup, of course season as you want.

I can potato soup, except I add bacon bits in the jars also. Then when I go to heat it up I thicken it with instant potatoes and add the cream.

Thanks for sharing your recipe! I was wondering, how did you determine "onion" as the item requiring longest process time (my presto manual doesn't even list onion, nor could I find it under vegetables on the NCHFP website)? I presume you are looking up each soup item and the item with the longest processing time is the time you use for your soup? So even though potato was the most abundant veg in this soup, you don't use the processing time for potato, you use the time for the veg requiring the longest processing time. Am I understanding that correct? Thanks so much, I just found your channel and can't wait to check out other videos!!

Yes, there are many agriculture extension resources through major universities that have a lot of additional guidance on home preservation and NCHFP often references them. Onions require pressure canning as a low-acid vegetable. Step-by-step directions for small onions (1 inch in diameter or smaller) are available in the University of Georgia So Easy to Preserve book which is available for sale. Follow all pressure canning safety procedures, including packing and filling the jars, venting the canner before pressurizing, and cooling. Read Preserving Food: Using Pressure Canners to learn more about pressure canning procedures and safety. To learn more about the principles behind canning, read Guide 1: Principles of Home Canning from the USDA Complete Guide to Home Canning.
