Taneya's castella are something that the current chairman (Tokuji Yamamoto) has always cherished. The ingredient is so simple and cannot be baked without extraordinary effort and skills. It is one of the important sweets of Taneya that has inherited the manufacturing method and technology from generation to generation.
This time, we will introduce "栗百本 (Kuri Hyappon) ( which means a hundred chestnuts)" in La Collina Omihachiman. It is a castella specialty store that uses more than 100 chestnut trees, which designed by architect 藤森照信(Terunobu Fujimori).
You can see the castella being manufactured from inside the store through the glass windows, but we will give you a look inside the factory this time.

Every step is so well thought-out. It was interesting to see that they divided the yolk from egg-white manually. I assume they came to the conclusion that that was the fastest way.

Japanese Castella is the best. I personally love Nagasaki city’s Fukusaya Castella, May be because I come from south. I have never ever seen anything like this and eaten in UK. 🇯🇵 🇯🇵

UK has her original rich and buttery sponge cake. Castella cake was brought to Japan (Nagasaku) by Portuguese merchants in the 16th century. Since then this cake has been welcomed by Japanese people. and until the blooming of tourism after the second world war, then the cake was advertised and popularized as originated in Japan.

Just can't believe my eyes as we were told never over stir the sponge batter but he stirred it 3 times and it rise so well ! There are great differences between Homebaked and bakery baked. My Castella Cake can't stand more than 24 hrs on my table, have to pack and put in the fridge otherwise it will rot.

日本のカステラは冷蔵庫がない時代15世紀から続くものだから日持ちする様に作られています。ポルトガルから伝わりました。 日本のカステラと台湾のカステラと全然違います。 日本のカステラはどっしり重く、とても甘い焼き菓子で、台湾のカステラケーキはシフォンケーキの様に軽くふわふわです。

USA gave an order of 1000 hardware equipment to Japan with a condition that, only 3 out of 1000 can be allowed to be faulty. They shipment was delivered n usa received 1003, with a letter. The letter said, te Japanese found it to be a really strange request from usa to expect 3 faulty machine. Anyways, they had sent the ordered 1000 + the 3 faulty ones n also described wer the fault was. This is a true story. Quality is a very personal etiquette for Japanese...

Not really. I had a horrible Japanese restaurant experience, just last week. The waiters were complacent, and the food was poorly made, compared the previous times.
