Two award-winning chefs take on the rotisserie chicken challenge. Aretah Ettarh, chef de cuisine at Gramercy Tavern, and Charlie Mitchell, executive chef and co-owner of Clover Hill, turn a grocery store chicken into a restaurant-worthy chicken salad. Ettarh serves her chicken salad sandwich on a hero roll with homemade mayo, tomatoes, lettuce, radish, and avocado. Mitchell builds his chicken salad on a sourdough toast topped with green goddess dressing, avocado, Honeycrisp apple, and confit egg.

I had a burger at the Gramercy Tavern once and it was easily the best burger in my life, so I'll give this chicken recipe a try even though I'm not a huge fan of chicken

This was amazing. Charlie is sooo chill, and his toast looked awesome, but there is no way I'm cooking an egg yolk for 40 minutes. Aretah's sandwich looks so delicious. I think I'll try to make their chicken salad, mayo, and green goddess dressing.... bookmarked.

I've always wanted to do this. I always buy grocery store chicken salad. ALDI and Publix have wonderful chicken salads which I eat with saltines. Not the same without saltines.

@@juiceplanet147 You've obviously never been to a Costco and seen the huge rotisseries at the back of every store cooking away. BTW, Costco loses some $35-40 million dollars per year selling their chickens as a loss leader to drive traffic to their stores. Same with their $1.50 hot dogs.

I'd do it with a lemon pepper chicken, some horseradish, and gherkin aoli. White young celery stalks (leaves on for the peppery taste), diced cranberry and grapes (for tangy & sweetness + texture), and some crushed pecans.

This is the first disappointing video from Eater. I really don't like this switching back and forth between chefs as it makes it difficult to follow what they are doing. If your only purpose here is to entertain then I can watch the Food Network, but if you want o teach, educate and expand the our minds to try something new then the focus needs to be on the execution of the recipe. We never need to look at any chef's face if he/she is doing something with their hands. As for the recipes... confit eggs? Not even if I was bored.

I could do without all the profanity. Maybe screen the guest cooks more carefully. Anyway, these chickens can be good mixed into other stuff but they are brined to the point of being disgustingly salty. You really need to mix it with something more neutral in flavour. And I did like the salad the guy made but honeycrisp apples are just sugar, I would use an apple with a bit more complexity. Perhaps a jazz or even gala apple, anything to get a little bit of tartness to balance the sugar and intense salt.
