If your hands are doing exactly what they should be doing, you're not going to cut yourself. It's not a hard skill, and a cut is usually not that bad as long as your knife is sharp.

Agree that is the way to hold for general chopping with a chefs knife but with smaller knives and for more precise slicing I prefer the index finger on top.

Even with non round handles like wa handles, you should use the pinch grip.

You use it rarely for special tasks. He’s talking to trained people at the end. If you hold it like that for general cutting we will laugh at you as you struggle and the knife wobbles lol.

Yeah it kinda depends. I work at a butcher shop and you will put your finger on the spine of the blade for precise cuts or fileting but first off we dont use chefs knives for that and secondly most chefs are cutting things other than meat wayyy more.

I do this, I'm a line cook. Never once had it roll. I don't even push down on that finger, I use that finger to measure how much resistance the tip of the knife is experiencing before deciding how much pressure to apply. Helps when you dont have your own knife belt and have to use the house knives that your coworkers mess up by hitting bone and crap. We have 4 straight edge blades and only one holds an edge. So if you see someone doing this a lot, they probably are used to working with crap knives.

When butchering fowl, i definitely will hold it with finger on the spine. When de-veining shrimp as well. Otherwise, no. With larger knives, It actually locks the knife into your wrist. You can’t do proper rocking slices like that. And you’re putting far too much pressure on the tip. Let the sharpness of the blade do the work.

@@thor498 I have good technique and a fairly large knife I had a tiny slip and here we are it is the only time I’ve ever had it happen and I got the bleeding stopped and got sutures on the hour no big deal

I always balance the knife on my index finger, where it’s balanced is where you have the most control of the blade.

adding to this, grip depends on your intent. index finger on top is ok in certain scenarios where you need pressure and more turning than you would just chopping (eg. butchery, mostly or with a boning knife) even holding the handle sometimes is okay but there is almost always a way better option. but hey, I'm not your mother so hold your blades however you see fit to keep yourself safe and efficient

Idk dude, we have been literally taught in culinary school that the plade where youre meant to hold a knife is... the handle, no finger on the spine, no fingers on either side of the blade.

When I use to be a Butcher using your finger over the knife was the way to go since you require more pressure on the meat and it helped dictate where the knife will go

Putting my finger on top helps align my wrist and reduces strain when my carpal tunnel os flaring up. Obviously, it doesn't work for everyone, or even for me all the time, but it helps most of the time, and I'll take an 'incorrect' but more comfortable grip over a 'correct' but uncomfortable grip any day. And if you're wobbling like that, it might be a problem with the knife, not the grip.

You can hold finger on top there is no one way for everyone there are better ways but at the end of the day do what you are most effective doing! Gyuto/chef knife I pinch grip, sujihiki/slicer knife I hold finger on top, it’s up to the user. Now if you are holding a knife and you have to use so much force the knife rolls like that your knife is too dull sharpen or swap to something sharper!

In Butchery using your finger is very useful, especially with boning knives. Where you point your finger is where your knife cuts

Hold the knife however you want as long as you feel comfortable with it. I've used finger on top whole my life and never cut my self while using claw grip.

It depends on what you're cutting. When using a knife, you should be able to be versatile. I use my finger on top all the time because I'm not a robot and also because my fingers are strong enough to keep a knife in place. I also spent over a decade in the lab dissecting mice, so maybe that level of precision has leeched over into my cooking

Doesn't matter if you're only cooking at home ... And not 8 hours a day 6 days a week. Most people have no idea the best ways to slice or chop anything. They just do it how their mama showed them.... Many will use a slicer dicer chopper gadget that produces all different sizes of pieces. My mom was anal about chopping everything the exact same size, little bitty cubes.... That cook down quicker

I’m a butcher and I just wanna say that it really depends on what you’re cutting or slicing. If you’re slicing onions or garlic, the one you recommended, called the Pinch Grip is actually better and safer. But if you’re doing a fillet of a Halibut or slicing pieces of meat that needs more precise cutting, the Pointed Finger Grip is still the best technic to use. If you’re gonna stab some burglar who entered in your house for the sake of self-defense, go for the hammer grip coz it’s actually use for stabbing. 😂

But unless you're cutting a rock, or working with a very unsharpened blade, you shouldn't have to apply enough pressure that the blade tips to the side.
