Recipe:
Coffee:15g
Grind:8/10 (1=very fine, 10=very coarse)
Water:230g @ 80°C
Brewer:Upright
Filter:Paper (use two) rinsed with hot water
Total brew time:1:05 until stir
1. Start your timer.
2. Add coffee and 50g of water into chamber and let it bloom.
3. Stir and then wait for 30 sec.
4. Add 180g of water into chamber.
5. Wait until timer is at 1 min 5 sec, then stir.
6. Replace plunger on top of the chamber and start pressing.
7. Press until the coffee grounds in the chamber are just visible above the water line and stop.

Found this video a few weeks back and it’s been my every day go to since. Tried a bunch of other champ recipies and aeroprecipe stuff but this one just gets the job done right. I love a bright acidic profile and this gets me right there. Thanks brother! If you ever redo the video, show the grind and do a live brew with no cuts and maybe even a timer in the corner. That would make it super clear to anyone who’s newer to the AP and trying to follow

Excellent video but why are you flattening the bed only to stir it immediately after adding water? I’m all into a flat bed but it seems a little excessive! Carry on your great work

Hi Kyle. Please clarify the timing. I think your timing instructions were …. 1. add 50 gm water, stir aggressively and let it bloom for 30 second 2. after the 30 secs blooming add 180 gms water to brew it and then 3. as you say…. "wait for your timer to reach 1min & 5 seconds"... then stir again and plunge. Does that mean bloom for 30 seconds then brew for 35 seconds, so the total time is 1min 5 secs OR does it mean bloom for 30 seconds and brew for 1m 5 secs, so the total time is 1m 35 aces? Yours is a great channel thanks. PS Any chance of doing a review of the latest Lelit Elizabeth, v3 I think it is?

I've been a home roaster for 15+ years and after experimenting with a zillion regions and farms, I always come back to Medium roast Ethiopian coffees, as acidic flavors of stone fruits (black cherry, plum, peach) are my wheelhouse, so after hearing your description I had to try. And indeed, this is a good one! I was skeptical initially because I usually brew a much stronger cup (35 grams of coffee), and I usually brew inverted, but although this does produce a lighter brew, it does a nice job with medium roast acidic coffees. I just got back from a biz trip and used this method (my trial run) exclusively for 3 days with washed Etiopian beans, and whadday know, I'm a fan! Thanks for this recipe Kyle! :D

I bought my Aero press over two years ago. Well, I have 2, one at work and one at home, my French press and Moka pot are now decorating my kitchen shelf. Why use anything else. Try it with different grind sizes, what a difference.

@@KyleRowsell True, I used to travel a lot with work and spend several days most weeks in hotels, I would grind coffee at home, put it in a zip lock bag and it fitted nicely in the hollow in the plunger. Fresh coffee for several days - none of that instant sachet rubbish.

@@torvous2476 depends on the recipe. I find for coaster grinds 18-24 is good. For finer 12-16. But as always this is just a guide

Love the AeroPress, have had one on my desk for about 10 or 12 years now. I use the original method, but will give this a try with my favorite Guatamala.

Tried it this morning with my Guatamala coffee. Certain toned down the sharpness or acidity of the beans. An easy recipe to follow and the use of two filters made the coffee much cleaner. I want to play a bit with the grind and I think this was a bit course. Thanks so much as this pulled out new flavors to this coffee and let me try a new method. Kyle - Great video, tried this recipe with the Onyx Guzman Ethiopian batch. It was incredible. I do normally use the Blue Bottle recipe and inverted method but this may now be my go to aero press brew recipe. Cheers

I don't understand the point of shaking to level the coffee before brewing. You pour the hot water over it "aggressively " and then stir to bloom. So, what's the point of shaking to level first?

When you say to stir again when the timer hits 1:05 is this 1:05 after the initial 30s bloom, or 1:05 including the 30s bloom?

Hi! It’s a debated topic for sure. Ultimately you’re wanting the most even extraction possible. With the aeropress one of the main purposes is to saturate the bed first so that the extraction is as even as possible during its brewing faze.

@@KyleRowsell its depends your recipe purpose but if u want to extract more, just leave more time in contact with the water or use higher water temperature, thats why on inmersion method its necessary blooming. Its want I get on my experiments

You said grind size 14-15 on an Encore. Did you mean 24-25? 14-15 would not be medium-coarse as the Baratza encore has 40 clicks.

I’d be curious to see an update now that Hoffmann’s aero press series is out. Apparently it’s best to grind finer, and brew at boiling temperature, and there’s no need to wet the filters. Maybe you could compare the two brew guides side by side.

Excited to try this! What type of coffee bean grinder did he use in this video? Or any recommendations for a grad student on a budget? I'm looking to buy one soon, Thanks!

If you are on a budget you should only focus on manual/hand grinders. The commandante is one of the most recommended manual grinders, but it is also quite expensive. Feldgrind has some good reviews and priced fairly, and its smaller variant Aergrind is fits into the Aeropress making it easy transport together. (and it is also cheaper) Depending on where you live I would recommend 1zpresso grinders, specifically the JX line. The normal JX grinds incredibly fast and can grind fine and course enough for most brewing methods except for espresso and turkish that require an ultra fine grind. for that you'll need the JX Pro (which I have). If portability with the Aeropress is important for you the Q2 has similar all metal build quality but in a smaller size, and therefore also a slower grind speed.

Question: Some brew recipes have you put the plunger in while you wait and then create a vacuum by slightly pulling up to prevent water from dripping during the brew. Why don't you recommend that for this recipe? Also just a fun comment, I would say that the blooming process is more like allowing the coffee to breath out all of the CO2.

Point to discuss: I noticed that many championship recipes use high coffee dose (30 gram-ish) to later dilute at the end of the brew. What difference does it make over a more standard (I guess?) brew like what you've showed?

The difference would be a different flavour profile, as 30g extracts differently than 15 in an immersion brewer. By how much? That’s the question,

Nice vid. I tried your method even timing it to the exact second but was a little disappointed with the coffee I got. Then I realised I used the Aeropress stirring paddle instead of the spoon. Rookie error I know but I will use the spoon next time.

Hey dude - used the spoon to stir and it was a much better cup but not perfect. I've studied this video really closely and must have watched it a dozen times and then I had a lightbulb moment - I wasn't using a glass jug but putting the Aeropress on a mug! Another rookie error but I have just brewed another cup using a glass jug and it is AMAZING! I can't thank you enough.

Just had a go. However... i have never liked long coffee. So i make my aeropress with 15 gr coffee and total of 145 gr water. I have never understood the ratio recommendations as don’t preferences vary?

Sure.... but I think certain things kinda aren’t up for much change. Like if I said “I like eggs, therefore, I will double the number of eggs in my cake batter”.... that’s probably outside the small range of how much egg should be in my cake. Similarly, as I understand it, ratio is pretty important and not all that flexible. Like maybe a 1:14 and you get a brick, 1:17 and you get water that someone spilled some coffee in, and your sweet spot is 1:15-1:16.5, that’s your window, incredibly small but makes a world of difference. And your preference vary lies within that small window.

It seems that rinsing the filters makes no difference and neither does blooming... both have no effect on the taste of the coffee.

As far as I know the AeroPress with the golden writing is the old generation. During design of the aeropress go, they decided on new materials. They are now building the normal aeropress with the new materials, and red writing. So don't feel cheated when it arrives

Alarming! The geek boys have given up their gaming and are releasing their frenzied energy into pseudo-coffee brewing obsession. It’s just a cup of coffee for goodness sake! My granny used to strain hers through an old sock and it tasted better than coffee pumped through lengths of chrome tubing and chunks of plastic. I’ve been making coffee for fifty years and I’ve tried the lot. I have an aeropress gathering dust on my highest shelf. I always return to a simple French press and feel no urge to perform before a camera to spread the message. Get another life, coffee geeks! It’s not a science!

9 minutes isn’t a long time to break down a recipe and give context that it’s not my own.

@@KyleRowsell There's no need to "break it down." There's only 3 aspects to any brew: grind size, water ratio and brew time. 9 minutes for that is far too much, because all the talking breaks the continuity of everything. Be succinct and brief.
