The head space is very important while doing this. I even do 1 1/4 inch just to make sure they don't burst out of the jars.

Try wisking the clear jelly in with the sugar in a separate bowl, this works well for cornstarch and flour to prevent clumping.

I’m trying to research the process once you prepare to make your pie. Do you bake the crust first? Use a pre baked crust? Do you bake the pie filling and if so, how long?

Use the cutter with your apple peeler. It makes peeling, coring and cuting go so much fatsrer. Mix the clear jel in with your sugar it will keep it from clumping. And blanch your apples for 1 min in boiling water. It will get a lot of the air out of your apples before you put it in the filling.

Your apple pie filling looks delicious! I don't have an apple tree but I do have a Fuyu Persimmons tree. Do you know if this recipe would work using persimmons? Not necessarily making the filling part but canning persimmons in a light syrup? I was thinking 1 cup sugar to 1 gallon water. Thank you very much. 😊

Hi, I followed along with your video and I have a big problem. I hope you can help. I canned 1 Qt and 4 pts. When I took that out of the water bath they looked different. As I was wiping the jar down. From not putting vinegar in the water, I noticed that none of the jars sealed. When I took the ring off there was pie filling that came out and was all under the lid. Can I re can them?

After catching your live opening of the water bath canner… Last weekend I canned potatoes. First attempt and it was successful! It’s a satisfying experience once you’ve accomplished such a task. Thank you for being you. You’re so kind inviting us into your home & life, sharing your methods- successes and failures alike. I have learned a lot from you. So much so- I just decided- “Leap! Potatoes first.” I want to try this filling. Curious if Cornaby’s Thick Gel would be a suitable replacement for the clear jel?? (Being that the Cornaby’s thickener in non-gmo, I would prefer using it.) Do you (or anyone else in the comments section) have guidance or suggestions?

I agree, any low acid veg, meat or combination food should be pressure canned. I understand ppl did water bath low acid foods many yrs ago, but it takes hours and then you lose much of the nutritional value. As well as risking bacterial growth

Clear Jel is a thickening starch. I’m not sure if there is another name for it. It is superior in comparison to cornstarch because of it’s ability to tolerate higher cooking temps.

I’m guessing it might be arrowroot powder which forms a clear gel when you add water. My mum used to give it to me as a tiny child if I had an upset tummy or childhood sickness. The Japanese have their own version called kudzu powder which I have used to thicken soups for my now very elderly mum.
