This is the best way to cook a steak, without a doubt. And if that didn't get you... It takes little to no active time, is all done in a pan, and is extremely easy as long as you follow some of these really simple rules. Plus, with Valentines day coming around the corner, and also because steak is the best, this seemed like a good idea to upload. So whether you're cooking a ribeye, t-bone, sirloin, or strip steak, this recipe is for you.

Cuts of Steak I recommend:
Ribeye (my favorite)
Sirloin
Strip (also known as new york strip)
T-Bone or Porterhouse (be aware that you have two diff cuts on this which means it's going to cook at diff degrees on both sides)
Ingredients you'll need:
1-2 large steak that is 1.5-2 inches thick (You can also do two steaks at a time per pan if you wish if your pan accommodates two without overcrowding the pan)
Kosher Salt to taste
Black Pepper to taste
2-4 cloves garlic, lightly crushed left in the skin
1 bunch of fresh thyme
4 tablespoons (56g) unsalted butter
Temperatures To pull your steak out of the pan:
Rare: 125F (52C)
Medium Rare: 135F (57C)
Medium 145F (63C) wait what are you...
Medium Well 150F (66C) wait.. stop
Well Done 160F (71c) oh.
I'm joking, if you like your steak well done I won't make fun of you. Okay maybe just a little, but it's out of love

Guys just to clarify if you want your steak at 135F you actually want to pull your steak 3-5 degrees under that because that temperature will carryover a bit while it's resting. -

@@arianaperea4850 meat of any kind is EXTREMELY healthy for humans. Some more than others. Some not at all, if not raised properly. I found a farm near my house which i buy my meat from. If it's the cruelty of factory farming that puts you off, there is a solution. You just have to be a LITTLE bit proactive. Find a farm near you.

Thanks man, would it be too much to ask for you to also include rest-of-the-world temperature. Yes, I know I can look it up, but I'd rather keep watching your video instead of going to another website to calculate.

Hey man I'm a Senior in highschool and I just used this to cook 4 steaks for the family. We haven't eaten yet but everyone tasted it except for me. Just made my first steak ever to this video. Literally the best steak I’ve ever had. Idk if it’s cause I made it myself, or cause it’s only the third time I’ve ever had steak, but it was so perfect. I used a little more seasoning than you did, but the basting was absolutely KEY! I’m stuffed full and I’m thinking about the next one I’m gonna have. This will be my go to recipe from here on out. Short sweet and to the point. 👍🏽

Love your channel man! I've almost always had a grill until about the last 2 years and cast iron on the stove can be a little tricky.. followed your steps and I love it. I think the garlic, butter, thyme baste has a big deal in the success.. keep the info coming

This was so helpful. I made steak for the first time for my boyfriend. He’s the better (best) cook out of the two of us, so I was really nervous I would mess up, but he was so happy with what I made for him!! Great easy and quick recipe! Made tenderloin once and rib eye the second time and they were the best steaks I’ve ever cooked! Also, Josh’s cookbook is awesome! It’s informative, funny, and makes cooking from scratch not seem so intimidating and it opens your mind to new concepts and ideas when cooking! Definitely recommend it!!

I was following a recipe from a Weber cookbook yesterday. It was more or less the same thing just on the barbecue instead of a skillet. It turned out great. I love the barbecue and the grill marks, but I'll definitely need to try it in a skillet.

I tried it today, after years of my mum telling me I’m not allowed medium rare beef because it’s “basically raw” and it was fantastic. I’m in my rebellious teen years, and I finally stood up to my mum asking for medium rare. She said “You dare oppose me, brat?” “I have been denied of good upbringing, only ever tasting curry, due to our Indian heritage. Father has travelled around the world telling me about all the things that I’ve missed out on. It’s time that the chefs daughter actually tastes good beef.” “Then go. Make it yourself, for I have no care for your raw beef.” And thus, my dad bought me a sirloin. I followed your steps, Sir Josh, but alas, my family did not have a meat thermometer. I braved through it, my brother counting down the seconds on each side, spiking my nerves. I lay it to rest on the cutting board, anticipation coursing throughout me. I had a small audience behind me as I picked up the knife: even my mum was glancing at the steak sceptically before looking away and scoffing. I picked up the knife. Laying it against the steak, I looked at my brother, who had also never eaten medium rare, and we nodded at each other. I sliced through it and we gasped as a flash of pink met our eyes. I looked at my father, the chef, for confirmation that it was indeed medium rare. He nodded proudly, grinning. I could have died from the taste. It was delicious. My brother had tried to take more meat from me, but I stopped him. We were about to start a war, when my dad stole meat from both sides of our plate, and we decided to just eat. My mother smiled at me. “Would you like some?” She said she was proud of me, but she would never eat it. Thanks to this video, I was able to eat medium rare steak.

Cool story lol. Steak is great, and it’s even better when you have it undercooked. Red meat and fish are way better when they are not fully finished. They are so amazingly juicy and tender (fish are any really juicy, but you get what I mean). Your mom has no idea what she is missing out on.

I used your method on a thinner rib eye I bought before watching your video. I used shorter timing and can honestly say it’s be best steak I have ever prepared! I would usually broil steaks and find them too tough. My steak was perfectly cooked, tender and delicious. Thank you!

Can’t stress enough how happy I am to hear you say “Let the steak rest 5-8 minutes”. Most videos recommend 10, but every time I wait that long, the steak is rather cold.

Yeah, I rest my steak for 5-8 mins on heated plates (Run the plates under hot water and dry them). Makes a difference

Pro tip: pull your steak out 30-45 minutes before you cooking it, pat it dry with paper towels and season with salt, then put your other seasonings on right before you cook it. This way the salt penetrates the steak and it is seasoned all the way through 😁

Pro Tip: Salt it the day before, keep it in the fridge and take it out 20 minutes before cooking. You can add other seasonings/marinades/textural changers 1-2 hours before and put it back in. There's really no point in doing what you said. Either go with Joshua or me.

I tried that recipe today. My steak was not as thick as recommended but still worked great. I never dreamed steak made in a pan could taste that great, it's unbelievable delicious.

I loved this method! I don't eat or cook steak much and don't have a grill so this was amazing. Cooked exactly like you instructed (seasoning before frying) and it turned out incredibly tender, but with that crispy buttery crust outside. Med rare all the way. This might be my new go to for meat eating friends :-)

I am 17 and I used this recipe for my first steak ever, I just didnt have thyme but I used everything else and it turned out pretty good! I definetly didnt do it perfectly but I still enjoyed it very much! Thank you

Hey Joshua,Just tried this (and yes, I allowed my rib eye to come to room temp) and it was delicious. I didn't have any rosemary, but I made it work with just the garlic. I oversalted a bit, so I have to be careful with that. Otherwise, this will be my new go-to method.

I love me some thiccc boi ribeye steaks. I actually find that they're a little more forgiving than other cuts, cooking-wise. They have enough fat in them that it's not a huge deal if you overshoot that medium-rare mark and accidentally bring it up to medium. The fat just renders out that much more and it's still nice and tender. Medium-well is a no-no, though. You also forgot step 1: hide your smoke detector under your couch cushions.

I'M SO EXCITED! i love baguettes and having been kinda raised in a french bakery i pretty much hate all the ones i have access too. also the doc says i gotta only eat bread that is sour dough so yay! i'm very hopeful too because your croissants were fabulous! (sadly i can no longer eat those and i agree that it's not right to sour dough those. i am however working to change my focaccia recipe into sour dough 'cause that's probably good although i haven't gotten there yet.) also, i've mentioned this before but i thought i'd mention it again: you're volume needs tweaked. specifically when you are narrating a bit of cooking, you're too quiet. this isn't a big deal except i as a hard of hearing person have to jack my volume up and my housemates don't love the sudden jump in sound when you go back to talking straight at the camera which is louder. the music say at 4:26 is about the same volume as the beginning and end bit. it's just that bit in the middle say at 2:05 that is quieter than the rest of the video.

I've worked at a lot of restauraunts. This method, with the steak marinated in teriyaki and garlic is the best I've ever had. We literally did it just like this, with the additional marinade.

Did you use Kosher salt or table salt? You can easily go overboard with table salt because it absorbs into the steak fast so you might mistakenly over salt certain areas and make sure you use unsalted butter vs salted butter.

@@hazemmohamad3344 yes it does. you really should get 1.5 to 2 inch steaks. they’re incredible. i live in the philippines and we found a place that sells well marbled 1.5 inch ribeyes for like 30 dollars. fuckin steeeeaaal!

Kris Deagle Most of the time people who are vegetarian or vegan don’t do it because they dislike the taste of meat, in fact most do, but because of the environmental impact it has. So they most likely like steak they just choose not to eat it for their diet.

Every time i order steak it actually sucks, I will try to make it with this video hopefully it goes well. Edit: ok i just made the steak and it was the best one i have ever tasted. But I needed a sharper knife and I'm sure i needed to cut some things out of that stake, so many things were rubbery and inedible. But overall, it went better than what I expected, thanks for the recipe ♥️ Update: ahem, I just found out that i did cut it the wrong way, i will do it again now. ... Ok I finished it, false alarm, I guess the issue is different, probably need more butter and to remove those leathery parts. Hopefully third time's a charm for the next time I make it.
