In this video, I am showing how to cook Arajiru (fish bone soup) with the left-over fish bones, after filleting fish yourself. This is a great small side dish to make, when you get a hold of a whole fish.
This is a second part to my previous video on filleting fish:

I just love the Japanese simplicity! I imagined a fish bone soup would need a ton of spices.

This soup looks so delicious. Going to make it. I am not at all offended by the fish head in the bowl. In Puerto Rico we fight over who gets the head.

Japanese cooking is mastering simplicity, enhancing the natural flavours of the ingredients and maximizing the use of the animal.

That’s what every Asian is doing. We don’t throw animal meat. It would be a waste and a disrespect.

My grandma used to tell me stories about when she was stationed in Okinawa with my grandpa, who was in the army at the time. And she often talked about a fish bone soup that the people in Okinawa made, so that their little ones and elderly could have strong bones.

I'm here because of Korone as well=)) I think you would like the Ukha soup, if you like this one. My mom was usually making the so called "three-fish Ukha" and it's delicious!

I find nothing more surprising then finding the Bad Reichenhaller salt on display in a kitchen in japan (or whereever this takes place). Fantastic recepei, but this kind of dish looks like it belongs to a former era. I bet this was extremely common like 1-2 times a week in times, when bigger families fished/purchased fish regularly and had to deal with the leftovers.

Exactly what I was looking for! Just bought two fresh sea bass and didn't want the bones to go to waste. Can the bones (prior/after the initial blanching) or soup (after cooking) be frozen so I can use it as a stock soup base later?

Can you use any sake? I have a bottle of kikusui sake and was thinking of using it. Also, can we add vegetables to the soup? Like onion, carrots?
@taijiskitchen
@taijiskitchen 2 жыл бұрын
Kikusui is a drinking Sake, right? yes, defiantly! and yes you can of course add whatever vegetable you want in it. I would recommend such that do not have strong or sweet flavor like onion or carrot, but instead radish or daikon radish, nappa cabbage, but of course its your preference thing, so put in whatever you want to try! and you can also add Miso to it, then you will have fish bone miso soup (possibly also with veggies)!!

@@taijiskitchen thank you so much! I have Aji and bonito bones, can I combine them?
@taijiskitchen
@taijiskitchen 2 жыл бұрын
@@jules1599 you are welcome very much! yes you can, it will enrich the flavor, like in French cuisine or soup of Ramen noodle! in case the two flavor may don't match, then use soy sauce or miso instead of salt, because they have strong aroma, which will cover the clashing of two fishes. btw, where do you live? I envy that you have access to Aji and bonito bones!!
