In this new and exciting series, we will be exploring Japanese umami through cooking videos, learning traditional Japanese recipes which rely on the delicate flavor profiles unique to cooking in this region.
Our first video is miso soup, one of the most traditional and quintessential Japanese recipes often served with meals during all hours of the day. Once you learn how to make me so soup once, you can make it to compliment any Japanese dish you make in the future.

this was really fun and educational! I knew some of the basics of making dashi and miso soup, but it's nice to see people taking their time to show you al the steps. I'm not sure I would use these same busy fonts in so many bright colours, but I did enjoy the more spontaneous conversation!

Oh this is an authentic way and this must be so good!! People tend to use dashi pack or dashi powder nowadays, which also tastes good to me though. Also its easy if you want to cook quickly or if it's difficult to prepare dried bonito or kelp. I want to try this way too.

I love onion in miso soup!~ and daikon. I never make my own dashi but now I feel inspired to try! Unfortunately Katsuobushi is a bit tricky/expensive to get here in Australia so I usually use it very preciously 😂 I might buy a massive bag and give it a go!
