I just boil them till the water evaporate and then they fry in their own fat till crispy.

I was taught to go to a local butcher shop where its delivered daily, fresh, or a processing plant where its really fresh. My great grandfather told me never to buy YOUR meat where you buy your tires. Walmart has been known to add chemicals to their meats,But to each his own. Loved the video and your way of cooking them. Never had them like that before , defiantly trying it.

Matt G Thank you very much. And that's good advice to live by. I personally prefer to get my meat locally as well, it just seems to taste better. This product is just harder to get. I hope it turns out great for you, and that you enjoy it. 😁

TheWolfsWorld I totally agree. It is pretty difficult to find. When iam lucky to find it fresh I buy like about 30 to 40 lbs. For a few dollars more the butcher will even clean it for you . Just saves time. Really looking forward to watching more of your videos. Be Blessed.

Also called marrow-gut, but this guy drains water through it which eliminates all the nutrition. This section of the gut has the final nutrients that will be absorbed into the system. Makes a very good, but FATTy soup. This is not waste or manure that is in this section of the intestine. I believe it is also know as milk-gut to some Hispanic cultures. There is another section of the gut called "straight-gut" by U.S. Natives. This section does have manure waste inside and must me cleaned out. It is then more or less a sausage casing. The fat that is with this section makes a real unusual but excellent soup. This casing once cleaned of manure is turned inside out and stuffed with @ 1" thick lengths of the animals tenderloin. So now the lean and the fat are to the inside of the gut and the manure side is on the outside. The gut is then tied off and seared in a bed of coals and then boiled. The "soup" is on the inside with the tenderloin. Pretty much of a lost art anymore because the young have been raised like mainstream society and believe that meat comes from stores.

I am a member of the Crow Tribe of Indians in Montana USA. Our people went through some starving times so very little of an animal was not used in some manner. Lean times were a part of our natural way of life and in fact a necessity for the health of the people. "I thank you for my hunger and the added sweetness meat has after such a time" (part of a prayer). Buffalo or Bison was the primary food source. I imagine that only wolves and other carnivorous predators had a higher volume of meat protein in their diet. Yet many of my family lived past the century mark. A young pregnant bison was the highest delicacy. Unborn calf was my Grandfather's favorite meal and there was also udder(wet or with milk), strawberries(a cotyledon between a cow and her calf). Most of the other parts I've seen on the extreme cooking shows used by other cultures such as the 4 kinds of tripe, hoof soup, lungs, spleen, and other organs and the different ways of preparing them. Other than the marrow gut haven't had these foods in over 50 years. Funny how starvation foods became delicacies but now are no longer because of the pace of the human race.

Idk. My mom grew up deep in Mexico in a small village and they wash the inside. At least every time I went and when my mom makes it here in the states the inside is washed.
