How To Cook Black or Purple Sticky Rice (Khao Kum)
INGREDIENTS
3 cups sweet rice
1 cup black sweet rice
6 cups water for steaming
COOKING UTENSILS
Sticky rice steamer pot
Sticky rice bamboo basket
Rice spatula
Bamboo container
*These can be found at the Asian grocery stores or online.
Using the bamboo basket for the first time.
1. You will need a large deep pot that fit the basket.
2. Put the bamboo basket in the pot and fill it with water.
3. Soak the basket in water over night.
INSTRUCTIONS
1. In a large bowl add the white and black sweet rice. Combine these two rice together.
2. Rinse the rice in cold water three times until the water is nice and clear then drain.
3. Add cold water and let the rice soak for at least 4 hours or overnight.
4. Add the water into the aluminum pot.
5. Rise the bamboo basket in water to remove any residue.
6. Drain the rice and rinse with cold water.
7. Pour the rice into the basket.
8. Let the rice drain for a few minutes.
9. Cover the basket with a lid.
10. Place the rice over the pot and steam for 30 minutes (do not let the basket touch the water)
11. Remove the life and flip the rice over. Covered the rice and continue steaming for 10 minutes.
12. Turn off the heat.
13. Use the plastic or wooden rice spatula, to hep loosen up the rice.
Transfer it to a bamboo container or thip khao
