My maternal grandmother used to cook this mee sua soup for us when I was a little girl. Every time i have this simple noodle soup, I am immediately brought back in time. My granny is not around anymore but I'm glad there are a few iconic dishes I can get Roland to make every now and then to help me feel her presence.

Ingredients:
Serves 6
Making the soup base
---
6 pieces of chicken carcass
5L of water
350g of ikan billis
15g of rock sugar
2 teaspoons of salt
Marinating sliced pork
---
300g of streaky pork - sliced thinly
2 teaspoons of cornflour
0.5 teaspoon of salt
0.5 teaspoon of baking soda
A few dashes of white pepper
Marinating the pork liver
---
300g of pork liver
2 teaspoons of cornflour
Marinating the minced pork
---
350g of minced meat
2 teaspoons of cornflour-missed out from video
0.5 teaspoon of salt
A few dashes of white pepper
Putting the mee sua soup together
---
Put about 5 scoops of soup stock in a small pot
Add 2 rolls of mee sua
Some minced pork, sliced meat and pork liver
Also add some green leafy vegetables (eg choy sum)
Add an egg, about 1 teaspoon of sesame oil and some Chinese cooking wine

My grandma usually told my mom to cook this meal Everytime I got sick. N mom cooked this mee suah with gula jawa n added some boiled eggs n Hainan chicken Everytime I had my birthday when I was a kid. This become my comfort food until now.

Many years ago when instant noodles has yet to be invented, my mom used to fry up anchovies & ginger for the mee sua soup stock. Fast & easy. Occasionally I still make it in nostalgia. Fried liver with ginger to make the soup is good too, just pour some red Chinese rice wine into it.

My Korean family makes something similar except we only use the anchovies and garlic which results in a very clear broth. Your version looks quite flavorful with all those other seasonings (doing a mental inventory to gauge whether I have all the ingredients). I might try and make it one day when I'm feeling up to a challenge.

Cool! The clueless me simply sautee smashed garlic, add water, salt pepper n in goes the mee suah. Perhaps some vegs whicever available. Once the noodle boils, break an egg in and they are super already for me. Yur ama's is the luxurious version indeed... will whip up ama's version when i have company over

I just cooked this, so yummy and I regret not cooking more. I used pork ribs instead of chicken carcass. And thanks for the tip on dry roasting the ikan bills, the soup becomes so fragrant from the ikan bills

mee suah is rather challenging to me, I normally boil them and drain them before adding soup. But I have seen a few videos (yours included) which put the noodles in, cook and serve. Wouldnt it be a bit too soggy and starchy?

great recipe! my grandma's recipe use mushroom and it makes the dish very fragrant. Btw did you not wash the mee sua? My mee sua comes out very salty so I need to wash and boil it for a while to reduce the saltiness :D

Hmm maybe you can try buying Malaysian mee sua. We think they taste a lot better than the china made ones.

Thanks for sharing, it is better to boil the Mee Sua in water not in the soup, it is very salty. In cook seperately, the soup will be clearer and taste better.

Can advise when to use Hua Tiao wine and Shaoxing wine? Are they the same?

Hi Elaine. Shaoxing is a place in China and huatiao is the type of wine. The most popular cooking wine from Shaoxing is Huatiao wine so usually people will call it Shaoxing wine or Shaoxing huatiao wine or even huatiao wine. Hope this helps.

A nice bowl of Mee Sua that warms the stomach as well as our hearts. 😉 Another good way to eat Mee Sua is to cook it in 十全大补汤. Absolutely yummy if you like it herbal. By the way, what type of Mee Sua do you prefer? Fuzhou Mee Sua is really good. I really think Mee Sua from Malaysia is better in quality and texture compared to those we find in our local supermarts as they are either locally made or from Hong Kong/China. Just my 2 cents.

Agreed. After trying the one from Malaysia, we never turned back. The noodles are more chewy and less likely to turn gluey. 👍🏻👍🏻👍🏻 very good.

If the meesua is Blanched n wash off all the starch before u out into the soup, the meesua will taste even better

Haha Stan. Just checked out the temperature in Sydney and it’s a high of 26C and Low of 19C. You will probably flip if you’re in Singapore. Dec is a cool month for us though. We have a high of 29C and low of 25C. Usually the temp here is around 34C. Hot and humid. Phew! If we ever open a shop in Australia, you’ll be the first to know :-) That’s a good dream 👍🏻👍🏻👍🏻

what is the best time to do first boiling in order to get good clear stock/soup from chicken and meat, brother?

Hihi. We attended a short cooking session by a Michelin starred chef once and he showed us how clear chicken consommé was made. Once your soup stock is ready, add finely raw minced chicken into the broth. As the minced chicken gets cooked, the coagulation of the chicken will trap the fats, making the broth clear.

Not too long. You can take a few strands to try after the noodles turn soft. Keep trying and after a while you’ll know how long it takes to make a bowl of perfectly cooked mee sua. Happy cooking!

Soup Base: Pork Bones 500g, Chicken Carcass (chopped) 1 Nos, Stir Fried Anchovies 100g, Green Onion 1 Stalk Bundle, Fried Garlic (2 Tbsp), Some Red Dates. Seasoning To Taste : Rock Sugar, Abalone Sauce (3-4 Tbsp), Salt. Boil 2 Hours. You can add some chicken gizzards (cut slices after cook soft) and chicken feet (cut half remove nails), (boil soft can be used for side meat ingredients for noodles). Soup Spices: 1. Bay Leaves (4 Nos) 2. White Pepper Corn (1 Tbsp) 3. Star Anise (3-4 Nos). Toppings Meat: Frozen pork balls is ideal, boiled chicken gizzards and chicken feet

Hello,I am quite surprised that there are no spices like ginger used when you cook chicken and (anchovies) ikan bilis. EVen after scalding and cleaning, there will always be chicken smell!

Hihi. We didn’t find the need to do so. If you are sensitive to the smell of mee sua, we suggest you boil the mee sua in a separate pot of boiling water. Once the mee sua noodles have softened, transfer them to the soup stock bowl when your ingredients are almost cooked.

Won't the mee sua absorbs the soup and becomes mushy? Mine always becomes one mushy mess..:(

Hi Szeling, we realised that mee sua from some Malaysian brands have really good quality mee sua. Unfortunately we can't remember the brand we used but there's this brand that's pretty good. Not mushy mushy - which we do not like too. It's more expensive than the ones from China but it's totally worth it. Thanks so much for watching our video :o)

im a muslim so pork is a no no...so replacing everything with chicken hopefully will work out..very much thanks for the method of the removal of the anchovies guts and heads..very much helpful..look super delicious..going to make this soon wish me luck..
