1 new york strip steak
2 cloves of garlic smashed
8 sprigs of fresh thyme
1 3/4 TBSP rosemary salt
1 1/4 TBSP finely ground black pepper
3 TBSP unsalted butter
2 TBSP high smoke point oil

he gave me confidence to go out and buy meat and attempt cooking for the first time, will update on how it came out EDIT: got the best steak there took it home and tackled it easily without knowing a clue about how to cook. came out medium and tasted amazing. opened the door for me to start cooking more and i really surprised myself with how well i did.

So many great tips, the only thing I would add is to cross hatch slice the fat cap prior to cooking. Slicing the fat cap will release the tension and let the steak lay flat in the pan otherwise as it shrinks it causes the steak to cup and pull away from full contact with the pan. It also lets the seasoning on the fat cap penetrate and let’s the fat render a little easier. Enjoy!

Thanks for sharing, also good to cut shrimp the same way by cutting the tendon the shrimp won’t curl.hence tempura shrimp that cooks straight and doesn’t curl. Happy New Year all chefs and cooks alike.

I cooked this tonight for my son and me. Amazing... the fresh thyme and garlic with the butter and the good seasoning gives so much flavour. Indeed wait for the oil to cool down a little before adding the butter. This is so simple even I can do it :) and now I am not afraid to make the pan ripping hot anymore (never done that before).

Why are you telling people to put oil in the pan after the pan is hot also why are you telling them to put oil in a pan that's been sitting on high heat for 6 minutes I burned the shit out of my self putting out the fire the steps in this video caused I dont even want to sue you just stop putting horrible info out targeted to new cooks or stop saying things that will get someone hurt or mention every fine detail

Hi Sonny! I've been an avid follower of yours for many months now, and I just had to tell you, I used this technique on a $6 manager's closeout top sirloin strip steak and even though I was super nervous about how long I was basting, I ended up having nothing to worry about, because I think it was the best steak I've ever cooked, and I'm a woman who looooooves properly cooked steak (medium to medium rare). I love seeing how far you've come, so please please please keep up the good work!

It’s all pretty standard for cooking a steak on a skillet. If you have cast iron and it’s hot as fuck you’re usually good to go.

So I actually made this, it was my first time cooking a steak in my adult life. I got a well marbled dry aged NY strip from Whole Foods (barely any fat cap though, probably trimmed off after the aging). I cooked mine for probably about 2 minutes longer than you did, I was aiming for just shy of medium and I think I nailed it. The thickest part was a perfect medium rare which I was a bit scared to eat at first. But I have to admit it was much more tender. It’s definitely true a steak can take a ton of salt and pepper. Great experience & advice

First time making a steak, I followed this tutorial and I really blew myself away. It was so good. I used Garlic Powder instead of the rosemary salt and swapped the thyme for rosemary. It still ended up better than I expected

Hey Sonny, I did this with my fave, bone-in ribeye, 2 inches thick, cut by my neighborhood butcher. Dude, I gotta tell you, this is the absolute best steak I ever made and I've made a lot and (I thought) some pretty good ones. This beat them all. I turned my brother on to you (in Montana, home of some pretty good steaks!). He's a fan and a sub now just like me! Keep up the good work, your explanations are so good and so important. 1. Add oil, kosher salt finely ground pepper all sides rub in. 2. Set high heat place steak, let stay for two to three minutes after put butter 3. Leave to rest and add butter.

Thanks for the video. My steaks turned out perfectly. I didn’t have any thyme so I seasoned them with black pepper and seasoned salt. Perfect medium rare with an awesome crust.

Bro. Nailed it. I always overcooked my steaks using people's suggestions. Turning off the heat when you turn the steak was it. Nailed it. Perfect Medium Rare.

Made these tonight for the family. Holy cow they were great! My biggest problem is cooking them too long. I don’t trust that they’ll get cooked to where I like them (no more than medium). I’m getting there, though.

And of course grab one for mom too so they both can celebrate at home and enjoy since its freezing outside and Biological Mother is terminal and Dad COPD year 5. Sonny, I got people in my life who like their steak done well throughout....yeah, I know, I know. So, in terms of time and temperature, how do I adjust the cooking to achieve a good well-done finish that doesn't turn out like jerky or shoe leather? LOVE your channel, the instruction is superb! I think it might be impossible if not unachievable in a normal home kitchen the rareness on a steak is the same way you look a dryness on a chicken breast. Well done is the equivalent of a dry chicken breast. Well done steak is used in some dishes but i don't think you can make a well done steak juicy to the point of medium rare. So what I'm saying is a tender well done steak might be impossible.

Though I myself don't care for "bloody red" rare steak, I also don't like to ruin a good piece of meat in a failed attempt to make it well-done yet succulent! Thanks for your comment...I will side with you on this matter and say no more! :-)

Oscar Abarca Chinchilla in that case I would keep the heat high and cook it for 2-3 minutes After you’ve flipped it, then turn down the heat and baste with the butter and herbs another 1-2 minutes

Elgin Coates roughly 2-3 minutes or until it’s about 130 Fahrenheit in the middle.the time is gonna differ depending on how thick your steak was and how long you tempered it 👍
