In my videos, I show authentic but alternative Japanese home cooking, which can be make with the ingredients available outside of Japan.
In this video, I am cooking one of the most known Japanese dish, Teriyaki Chicken. It is super easy, never fails and always delicious. Whenever I make this for my foreign friends, they always love it and most of the time lick the plate and pan until nothing is left! lol

Ingredients for Teriyaki chicken
Chicken 200-400g (8-16 oz)
Soysauce 3 Tbsp
Sake 1 Tbsp
Mirin 1 Tbsp
Sugar 1 1/2 Tbsp

In Germany you can find deboned chicken at most Kaufland and Lidl markets. If you're lucky your local butcher also offers deboned chicken on request. I live in South-Germany and I never had problems with finding deboned chicken. Hope that helps you.

I made this exactly as you do tonight for my son and me. It was fast, easy and delicious. He loved it. As you suggested, I served it with rice, and salad with your Tahini dressing. I saved the bones and put them in the freezer for Zosui. A good sharp Nakiri is essential, and I just got mine in the mail today. Thank you for all your teaching.

I liked your simple and easy teriyaki sauce. The way you debone the chicken looks so easy unlike the last time I did that it was a struggle. Now I could try your method.

Thank you, chef! Easy sauce to make, nice and clean flavors shining through. I like to cook the skins slowly in the pan to render the fat, and the skins get crispy. Stif fry veggies, or cook the meat in the fat. Adds another another dimension of flavor to dishes.

I wouldn't call it the soul of Japanese food, since it is rather new in the culture, about 200 years old or so, but yes it is a great invention!! glad you like it!!

abetter way to debone between the two parts of chicken is to kinda twist and snap so the joints disconnect. that way you can retain as much meat as possible and do a clean cut

I like to marinade the chicken with minced ginger and garlic and a splash of sake for about 30 min. Then pat dry and make the teriyaki.

Bei tegut kann man auch Hähnchen ohne Knochen kaufen. Es heisst “Pollo Fino”. Es gibt auch Bio Pollo Fino. (Ich weiss nicht, ob es ein tegut gibt, wo Sie wohnen.)

its better to use raw sugar, but brown sugar is also fine. the flavor may be a bit too thick.

teriyaki sauce is not at all commonly sold in Japan, since it can be made very easily with soy sauce and mirin/sugar. but if you have the remade teriyaki sauce, just use it!

Hi Lena, thanx for asking! woo, I never thought of that... I never tried it, so I couldn't say, but I would avoid beer or wine, since beer has a bit of bitterness and tanginess and wine has sourness. But perhaps whisky, bourbon, gin or vodka might work (couldn't guarantee it though). There's no right answer to it, so I would say, just give it a try and see if YOU like it!!
