Lets see a video of Trent at home actually cutting the muscle groups into steaks, roasts, burger grind. etc. Love to see how the butcher finishes it to the grill.

At 15 my my first job was in the local butcher shop a very valuable experience and with my knife skills I get to drink a lot of free beer during deer season wish I was closer and could help on some elk and bear. My only disagreement is that ground(hamburger)meat should be a last resort for the scraps, the shank meat is great braised and I prefer chili with cubed up meat. another great and informative episode thanks

I love elk meat, and, of course, venison. My friend, John (RIP), once gave me a pound of chili grind elk that he had harvested. And I made some of the best chili I have ever made out of it. So, if I had been there with you guys, I would have taken a pack load of that elk meat off the mountain the price of a pound of chili grind elk. Good stuff.

Love your stuff guys. You inspired my youtube channel. This stuff is the most intimidating stuff...trying to debone the meat and harvest the animal. I like to think I coined the term, "Hack N' Pack" in my first ever archery hunting video. Anyway, watched all the DVD's. You guys are fantastic. Thanks for the video.

Hey Cody, you gonna be at the Myrtle Creek shoot in early February. I'd love to meet up with you. I grew up shooting that course and will be heading up from the Medford area to shoot the day of their shoot! Good job with the butchering Trent. I'd love to see a video of the at home butchering. I butchered up my last years elk at home but would love to see someone who has done it quite a few times and see their tricks.

Can you go over a little bit about hanging and aging the meat. Here in Utah season starts in August and what would you all recommend? Can you still age the meat without having a big walk in cooler or what would be your recommendation on that? In hot weather conditions.

When putting the meat into the game bags how do you sort it out to remember what meat is what? Hamburger in one and steaks in another? What sections do you use for jerky?

Love ur stuff guys, I'm Oregon boy as well, I've done pretty good with harvesting elk, me and brothers have always taken the full quarters bone an all, never really watched a debone game clip so thank u, I will have fun looking forward to trying this and saving our backs, do u guys prefer gutless method or full gut for getting tenderloins??

Jesse Clark Most the time we don't bone out unless we have some miles to pack meat. We use the gutless method. The next video we post will be showcasing it and the method we remove the tenderloins. Thanks for watching!

I do love these videos...thanks for doing these. So, when taking your trim meat, under the scapula, etc., how do you keep it from turning brown when it takes a couple days to get the bull out? I quit taking it because I always ended up throwing it away when I finally got back to town. I hate to do that, but the smaller meat pieces, rib meat, flank, neck etc. would get that red crust and/or be brown and nasty. The meat pieces are small enough that when trimming the red crust off was pointless because there is so little "good" meat that could be salvaged... thanks!

Ted Inman I know exactly what you're talking about. That glazed over part is actually protecting the meat under the surface. You can still grind the red crust and it will be just fine. I double grind all my wild game to make it more tender. Hope this helps.

FYI, as a ex meatcutter, the word "de-bone" is never used , it's just "bone", as in "bone out the chuck", that being said I never corrected a customer who asked me to "de-bone" her ham.

Hush Industries we will see what we can drum up. Biggest concern is getting the hide off and in high quality game bags. Then get it by a creek in the shade if possible where there is plenty of airflow on it. The air helps create a much needed crust. We also use a citric spray to help prevent fly blow and bacteria growth.

Besides tenderloins and backstraps I make the rest of my elk into burger. Really don't think it's necessary to hang the quarters for 4 days in my case...

I know this is kind of gross, but a lot of western states require you to leave the evidence of sex attached in some way to the meat. I have not seen this mentioned on any boning meat out videos that I have watched. How do you guys handle this? It seems like you wouldn't want that stuff coming in contact with the boned out meat. Thoughts?

We encountered that same situation several times over the year. Surprisingly, it is pretty easy to leave the scrotum attached to a small piece of hide on the hind quarter. We will try to document this, next time we do it. It is fairly easy and done properly, won't affect any meat spoilage.

It can be done with a bull and cow, pretty easily. A couple nipples is perfectly adequate (at least in Montana and Wyoming) and the scrotum left on one hind quarter is adequate to meet the law. You can make a very light incision all the way around the sex organ, leaving it naturally attached to the quarter but removed from the rest of the skin, then continue on like normal. To keep nasty body fluids from getting on the meat, I will wrap a plastic baggie around it and zip tie it closed as close to the meat as possible.

you can actually skin the hide off of the nuts and they will stay attached as well. less chance of getting hair and elk "stank" on the meat.
