Here is how to pickle senmaizuke using Shogoin daikon, a Kyoto-style vegetable.
If you don't have shogoin daikon, regular turnips will also work.
It is an easy way to pickle in a storage bag, but it is surprisingly tasty because it is slightly lactic acid fermented.

Ingredients for Senmaizuke
1 Shogoin daikon radish
Salt 2% of the weight of peeled Shogoin daikon
A pinch of chili pepper
About 5cm of kelp
*In the video, no sugar is added, but you can add sugar if you like.
The amount of sugar should be within 10% of the weight of the Shogoin daikon.
*Vinegar is not added.
Fermentation produces sourness.
