Fxxx it always brings me back to high school buying century eggs for my Mandarin class and my classmates would not even taste them because of the color. I ate one or two (in small bites like a rational person) and they tasted fine, like an egg lol (they didn't have much flavor tbh), I felt so alone surrounded by immature people who didn't want to try new things. It makes me happy to see people who do try things and are mature, or even make jokes and goof around but still give an honest, open minded review.

Emmy, I would love to see you cook something with this tofu. You mentioned making in a stir fry and having the tofu melt into a kind of sauce. I’d love to see you make something like that.

Just over soba noodles is awesome. But you can use it similarly to salted black beans. Great for a stir fry and the predominant flavor. Broccoli rabe or water spinach are great.

I LOVE that Emmy basically calls out all those idiotic, hyperbolic KZfaqrs who do things like swallow heaping tablespoons of Marmite or Vegemite and declare them disgusting, when you should be using about a quarter teaspoon of the stuff.

I love this stuff. I had pneumonia as a kid and basically lived off this and plain rice congee for weeks. I mostly use this to stir fry greens. Bok-choy, choy-sum or similar, 1 block of fermented beancurd, a bit of garlic, dash of rice wine - super quick and tasty greens. If you're looking to try this - the chilli version is x1000 better than the plain versions...

I always think those videos are so disrespectful. People don't realize that food is a big part of some cultures and making fun of someone's favorite food may be the same as making fun of memories attached to that food. I like that you give almost anything a chance and try everything in a very respectful way.

My Shanghainese friend introduced me to this not too long ago & they are so good with porridge! It is quite overwhelming at first, but it definitely becomes something you start craving. I love the one with chili oil & sesame oil!

I love showing my kid your videos, it’s great back up to getting her open minded about food :) My rule is the rule I had as a kid, if you ask about it I’m going to offer it and if I offer it you have to try it, not a full bite or anything just the tiniest taste and you’ll either become open minded or you’ll be careful about the questions you ask!! It drives me crazy when people right in front of me ask what something tastes like and I say “here, try it” and their response is along the lines of hell no that’s disgusting/nasty how could you eat that BUT THEY HAVE NO IDEA!! She’s five and so far we’ve nixed only a few things and I’m happy she’s curious and I hope she grows up to enjoy lots of foods because let’s face it, it’s a subtle way to instill cultural appreciation and awareness. You back me up all the time because she just LOVES Emmy 🙏🏻❤️🙏🏻

I'm really late to your comment, but yes, you should try it! it's really good for stir frying green leafy vegetables like bok choy, spinach, or water spinach (my favourite). fry up some garlic, then add in 1-2 blocks of fermented tofu, then add in the vegetables. it's wonderful.

@@nevissa4481 well you can choose not to cook with it and just use it as a cheese spread kind of thing on things like plain bread or steamed bun.

@@nevissa4481 also, you can add this and dark soy sauce to make a braise for pork hind, like the whole ham cut or shoulder in it and just braise for about 4 hours, comes out and the meat melt in your mouth.

My favorite thing to eat when I'm under the weather! I think I'll have to make some this week. Usually when I am half way done with one, I'll open another jar so that the cubes soften even more. The taste reminds me doenjjang (Korean fermented bean paste), but way more punch.

Oohh in that case, I’m sold! I was thinking the smell would be wayyy too off putting for it to possibly even taste good. But doenjang kinda smells like rancid foot fungus and it still tastes amazing xD so I figure I can give this a try.

I love this stuff!!! I love mixing it with sugar and soy sauce and lemon, you can also add chopped thai chilies too - I dont know if it's just my family that does it but that is fantastic with fried tofu and rice and really fresh veggies like cucumber

I grew up with fermented tofu with chillies. So I don’t notice the funkiness. It’s what I crave in my jook or just over rice when I can’t be bothered cooking or when sick.

I love that stuff! I grew up eating it mostly in congee or mixed with plain rice (Vietnamese household here - we'd just drop a cube or whatever amount we want in our bowl and mix it all up before eating) but now i sometimes also add a cube or two to my ramen, regularly stir fry water spinach with it and love it mixed with chicken rice! You can also use the brine but obviously you won't get the creaminess that the fermented tofu itself adds to your dish.

We'd the same with plain rice. It made plain rice tolerable to me as a kid and I still enjoy it today with plain rice because it's tasty like that. Cantonese household here 😁.

The tofu with sesame oil is what I used to love to eat with porridge and soy sauce when I always get sick my grandma would have a supple of them since back in her time it’s very rare to come by, sadly my grandmama isn’t with me but after this video I might go out to get some. I may not try fermented Tofu, but I wanted to say that I started making congee from your old video, and my house absolutely adores it! It's such a great meal for a household full of sensitive stomach. I like mine with a raw egg mixed in hot and soy sauce, some green onion, and I've started boiling and shredding chicken breast for some easy to eat protein. Thank you so much for your guidance!

I love how open you are to trying new foods. You are beautiful inside and out! Also I love the middle one too!! My mom used to serve it kind of like a side dish to rest of the dishes we had at dinner just so our rice would be less plain. She would scoop one block out with some of the brine and add a spoon of sugar on it and we would eat it with rice. I loved the brine and sugar because the tofu itself was a bit strong for me when I was younger but it would make me eat a lot more at dinner!

Thanks for posting this, Emmy! I first encountered fermented tofu close to 20 years ago at a sake bar in Kyoto (sake bar yoramu), where it was served unaccompanied on a small dish, along with a handful of other small dish "bar snacks" served with the sake. I loved it. personally it reminds me of feta cheese. i've purchased it from Asian markets in the states a couple of times over the years, and while it is certainly funky smelling, i don't recall it being any more funky than, say, the water some feta cheese is stored it.

Emmy you never cease to amaze me! I was just wondering about the difference between fermented tofu, and stinky tofu, and you began to explain it. Awesome video!

I've lived in China for years and I love fermented tofu. It scratches that, "bleu cheese," itch I get from time to time. It's also really good on fried pork or to mix with your la jiao to go with any sort of hot pot. Thanks for introducing it correctly to people, Emmy! PS., I can eat stinky tofu, but I would never order it. LOL

When I was younger, my dad let me try a bit of the white version. I couldn't finish it though because I hit a rather large salt chunk and the textual difference freaked me out 😅 I'm fine with it now though lol

When I had a better Asian market nearby, I’d buy this (or stinky tofu) regularly. Usually just nibbled a bit rather than eating it with rice or such, so I guess I was doing it wrong, though at the time I was pretty sure I wasn’t doing it right...

Smell and taste are extremely difficult senses to adequately put into verbiage that can be understood by all, and yet you do it effortlessly. This is my jam. My mom would make khao tom (I’m Thai) every weekend and always served it with fermented tofu, pickled cabbage, Thai egg omelette, and pork floss. Whenever I go home to visit, it’s always the standard weekend fare. Love it.

You make everything so interesting. I'm Vietnamese and grew up calling this fermented bean curd in English, but your calling it tofu cheese and describing it the ways you did had me wanting to eat it and see if I shared your opinions!

I'm so happy you made a video on this, and you explained so well on how to consume it. It's one of my favorite since I was a child, in Taiwanese culture we use it as dipping sauce for hotpot as well. Try it with your shabu next time it's great!

Ohhh I love this stuff. When ever we open a new jar my parents usually heat up some oil and use that to “cap” the tofu by pouring some into the jar. It helps keep it for longer I think.

When I visited Taiwan I was quite scared to eat stinky tofu, but when I did I was a bit underwhelmed. Since tofu is similar to cheese I expected it to be a quit strong taste, same as the smell ... it was more on the level of a very mild cheddar (i expected more something like bluecheese) I liked it

I really appreciate the way she describes it- never having tried it myself, the "funkiness" sounds like it could be compared to blue cheese, with the sharp, pronounced flavor.

Thank you for being reasonable and kind in your reactions - it reminds me of the spice Asafoetida - which smells absolutely terrible, but leave the tiny amounts called for out of a curry and you notice something is missing!
