Dragon's Beard Candy, also know as pashmak, or ggultarae, is a handmade confection made of thousands of threads of pulled sugar, so fine that they resemble hair. Here's my attempt (including the many fails) to make this ancient and delightful candy. 😇 New videos every Thursday and Saturday!

One really important thing to remember when heating sugar in a pot with a liquid (usually water) is to only stir the slightest bit at the very beginning to dissolve the crystals, and then do NOT stir again. At all. It changes the state of the sugar and hardens it. I know it's considered common knowledge, but if you didn't know, just remember that.

As a professional cook but not quite a chef, thank you for making and showing your mistakes. Being a younger culinary professional can be daunting and often times masters/teachers of the trade don't share the mistakes that help them learn. Learning from others mistakes is one of the things that has made food so diverse and rich, and I can't understand why the learning process isn't developed to help apprentices correct their mistakes instead of just not making any in the first place.

Yesss exactly !! It makes everything SO daunting, and makes you so nervous to try when they always seem so perfect and like its so easy.... But when you know even the professionals make mistakes and fuck up, that they have tried and tried again, and learn from their mistakes !! Its not as scary to try. 😊💕👶 practice makes perfect yall !!

Old candy pullers trick: warm the ball of candy before pulling. It will work a lot easier. The chewiness is the corn starch

@@scottsanders4589 They are extinct in Tasmania, Dodo's as well but most only know it by it's name and know little else. Emus are a bit more recent, in certain regions.

@@diGritz1 have you played Ark? I'm the reason all the dodos are dead. But seriously though the Emu is not extinct. Granted there are a few subspecies that may not be around anymore but that's like saying humans are extinct because the ancient Egyptians don't exist anymore. Furthermore humans causing things to go extinct has only just recently started happening. We basically just got here and we are practically already out the door. Just like the lystrosaurus which is arguably one of the most successful land animals to ever exist. So many things have gone extinct before we had a chance to affect them. Literally everything on Earth could die and in just a few billion years the earth will just reset itself just like it's been doing for the last 3 billion this whole crazy process will restart its natural Extinction Cycles all over again.

Hello Lovelies, There seems to be confusion with my counting in the video, so let me clarify what exactly I was counting. The initial circle (the steering wheel of candy) is 1 LOOP which consists of and will make 2 STRANDS. And for the remaining part of pulling process I'm referring to the number of STRANDS, not loops. "1 loop is 2 strands, then 4 strands, 8 strands , 16, 32, 64...16,384 strands of candy.

Did you cut it on opposite sides in the end and put it on top of each other? 🤔 Then it would be: 2 cuts on 1 loop = 2 strands. Can't tell for sure from the video🧐 But it looks like you where just ripping it once and rolling it up. That would be: 1 cut on 1 loop = 1 strand or am I getting it wrong? 😅

For anyone wanting to make this at home: do not stir the mixture as it cooks! She did not say it in this video but in multiple other ones I’ve watched they have all said not to stir and just let everything dissolve on its own

Also it shouldn't be cold, its supposed to be hot and handled with gloves or hands if you can bear this much heat. I had a neighbor who used to make it early morning and then sell it door to door. I once helped him in stretching part at the age of 8 and he handled it with metal rods to stretch because it was hot and in big amount which can't be handled by one person, there were like 10 people stretching one giant hula-hoop.

Thank you for sharing your failed attempts! I'm an art teacher and I tell my students how often first attempts do not meet with the results wanted. Also, one of my aunts was a master at homemade candy. She said it is important not to hurry the sugar mixture. You must be patient!

For those that have not had them, they were a standard pot pie crust, filled with spaghetti noodles, and a great spaghetti meat sauce... I always chose those over chicken, turkey or beef. I really wish they would come back!

Peanut butter play dough. It’s a concoction made of (I think) peanut butter, dry milk, powdered sugar and honey. I recall making/playing with/eating it in preschool.

The first time I'd eaten beard candy... it was like an accident! The packaging was super lovely so I'd bought it without knowing what it really was. Inside was some crushed nuts and seeds and the "hairs" were so fine and crumbly. A delight :)

Just a tip but I think one of your oops is that you place your candy thermometer is touching the bottom of the pan. The bulb can not touch it cause you will get a false temp it should just sit on the top of the syrup.

When measuring heat, tip needs to be in the center to get the correct temp.

PM Snowraven Candy thermometers are raised off the bottom. They never touch the pan. They’re in a metal frame.

Wow you did an awesome job for never ding this before. It needs to stay a specific temp . when they make it they are in either hot weather or they have a heating lamp or the actual counter is temp controlled that's how they do it so fast and it's giving u such a hard time because you are actually using ur hands to warm it... They all make it look so gosh darn easy. Lol.

Well done Emmy!. So impressed!. Usually they'd make it inside a box with a light on to keep the candy and the corn starch warm so it won't crack while pulling. Yet you did it!. Hats off!

Regarding the black shirt... I live about 45 minutes from New Orleans, and whenever I go there, I like to get beignets. Even though I've been eating at Cafe du Monde since I was a kid, and even though I've reminded myself not to wear black, it almost never fails- I wind up wearing black and getting covered in powdered sugar. I'm such a genius... 😒

She's got vocabulary. Lots of different adjectives. She speaks very skilfully, like someone playing an instrument and makes it appealing to listen to her. Most people have a very limited vocabulary and cannot properly express what they are doing, seeing, feeling, tasting et cetera. They sound boring very quickly.
