Greetings from Canada! The lye water is a basic substance. I assume it is to neutralize the acidity in the citrus fruit? It is possible that this also helps preserve them for longer? It probably helps make them sweeter as well? Does it help preserve the colour and flavour? Great video, I learned many new things today! XD Thank you and Happy New Year. I don't know how much is actually hers as there are seemingly lots of farms she goes to. If her actual land isn't that big it's fairly easy to maintain yourself.

I think that water helps the oranges to be firm upon cooking, yet supple texture.
