I limited out on my halibut this week, and got all my sockeye on the Kenai with my sage fly rod. Now to smoking and canning with jalapeño! Our family caught about 40 reds, all of us limiting out. Gotta love my homeAlaska! Hence my photo!

Try rolling the fish in yellow mustard before you dredge it in cornmeal. It gets rid of any gamey, mud taste. We do that with catfish with excellent effect. Also, Catholics (big C) love the shite outta mustard - the Irish love it too…in fact, it’s their recipe.

You mentioning whitefish and beer going together reminded me of when I read about the Limburger War years ago. It took places in Monroe, Wisconsin! They had a contest to decide which is the best snack: Limburger with beer or whitefish and beer. The judges got sloshed and couldn’t decide. That’d be something to cover.

Grew up not fishing when the cows were lying down. Not sure if that an all over Wisconsin belief, but it sure was where I grew up. Also I didn’t actually fish, I just liked being in the boat on a lake in summer.
