This one is real easy, simple, and a crowd-pleaser. STEAK! Besides ya cousins girlfriend who works for PETA, who doesn't love a perfect medium-rare steak right of the grill??? This is a back yard bbq style steak right here. No expensive 2 inches think cut, no gobs of butter, not blanket of bbq spice rub, just a straight-up SnP steak!
Now, this is a ribeye, but you can follow this easy technique for almost any steak out there. Now I'm a RARE steak guy myself, but this one is medium, which seems to be the normal middle road crowd-pleaser at any back yard cookout.
ribeye steak
Time: 4-5 min
Temp: 450-525 (hot ya know)
Tech: Direct
Recipe: Super Simple
EVOO
Salt
Pepper
- Coat the steak with a little extra virgin olive oil
- Kosher salt, course
- Hit with some fresh cracked black pepper
- Grilled over direct heat on a Weber kettle 22, or any other type of
grill you have. Yes, even gas!

Great job! I'd like to have a 2" thick ribeye or cowboy steak or tomahawk ribeye, but I usually pick up the old standard less than 1" ribeye at the grocery store. This is exactly the take I needed. Thanks.

Beautifully done and simple. Only thing I like to do, is set it on its side for either the first or the last minute or so, and let that fat cap get fully sizzled and even a little bit crispy in spots. I think it adds a great texture variation and I've never enjoyed springy /stringy fat. Personal preference.

My performer is a dr crate and barrel edition. A one year only run. I’ve had it nearly ten years and it’s still going strong. Best grill for the money period. Especially in urban areas using cl and the like. Bargains galore. Great channel, subbed.

My last ribeye splurge was $12.99 per lb for steaks that were in the 1.24 lb range. For us, that is a heavy expense, and a great treat! Believe me when I tell you that I want this steak grilled to perfection. We sear our steaks with gusto but we want our interiors to be bright red. Happy cooking!

I do my steaks exactly like this and everybody raves about them. I like to put a pat of butter on top while they are resting. With the lid on, there are no flame ups or burned meat. this cast iron grate is the bomb. Just keep it oiled up.

I prefer a reverse seared method where I slowly smoke the steak, then sear it off on super high heat at the end. That way, I get a steak that’s cooked to pretty much the same doneness all the way through with a nice crust and a Smokey flavor. Not hard to do on a kettle! Your steak looks all right as well!

A reverse sear will endanger this size of a ribeye. It was described as being 1 inch thick. You will risk making the ribeye into a football. It might still be tasty, however! It just will not be dripping any blood when you slice a piece for your guests.

@@tomtomthepipersson6675 , thanks Tom Tom, ever look at the reverse sear method , season the steak put in on a grate into a 275 degree oven till the internal temp is within 5 degrees of your favourite taste, and then throw it on the bbq that`s on all afterburners. You get the crust you like and the inside is magic.. Google "Reverse Sear" and you will get great info.. thanks for your response..

@@newlife155 I do that but in the BBQ, all of the coals are on one side with the smoking blocks. The meat is on the side with no heat under it, it gets the convection heat and the great smoke taste, then I finish it off on the hot coals. No need for an oven! If you use gas, just keep one side off and then finish on the hot grill.

Last weekend I grilled 3 nice ny strips using my grill grates for my mother n law. She likes medium so I cooked them to 140. Too red in the middle. My wife put them in the microwave to finish them off. 😭

Internal looked good to me (maybe a little rare for me--which I think is pretty typical of a grill cook). But man, no crust (because you can't get it this way--unless you like raw beef).

From your experience, how big of a difference is there between select and choice? My supermarkets tend to really only offer select cuts which is really unfortunate

This is an interesting question! I do not recall seeing ribeye steaks labeled in this way! They are always labeled as USDA Choice but I have never had the experience to shop for ribeye steaks in many parts of the USA. What happens when you ask the supermarket manager about the availability of Choice meat?

Robin Hoode I think it’s because here in South Texas ribeye steaks aren’t all that big of a meat. Most people prefer other cuts of steak, such as flank steak. There are some choice selections and once a week I can find a prime cut, but they’re a dime a dozen. I always hear conflicting stuff on whether you can cook a lesser grade meat but still end up with a tender steak.

Me thinks that you should include another point of technique- and a very valuable one- which is to let that ribeye come up to room temperature from the refrigerator before you begin to grill it. You should measure this if you cannot be certain, for example, if you are experiencing a very cold day in the neighborhood. IMO, a ribeye of the size that you demonstrated in this video, will need at least a half an hour at room temperature (72-75 degrees in summer and even more time in the winter (we keep our home at 65 to 68 degrees), to come up to room temperature in the center of the steak. (those are F degrees, of course! You aliens will have to convert to C degrees!). Restrain yourselves from grilling your ribeye steak (actually, any kind of steak) before it has had the chance to achieve room temperature all the way to the center of the steak. You will be rewarded with a tender and a juicy piece of red meat, fit for a carnivore!

So, my extended comment. If you try this method, you are setting yourself up for disaster. If you like blue-rare, you'll be fine. If you like rare, you'll be alright. If you want a properly cooked steak (medium rare), you _might_ get it, but I doubt it (as in, if I did this 10 times, I might hit it correctly 1 or 2 times). I've kinda given up on finishing steaks on a charcoal (or wood or whatever) grill. Do either a reverse sear or a direct sear but either way, I think the cast iron pan is the best method for searing. I haven't tried a torch, I suspect that could be as effective, if not better, than pan grilling, but charcoal will never give a good sear; I can't think of better evidence than this video where he cooked the steaks over charcoal and didn't get a good crust.

@Quick Caliber I haven't used briquettes in a couple of years. Last time I had a Little Smokey and the coals were probably about 3 inches from the grate. I might could have let the coals heat up more before searing but they were pretty Damn hot.

I know it’s “politically correct” to cook steak to about medium rare, but I truly can’t stand the sight of so much red. If I want well on a steak, is there a way to still get some tenderness out of it?

Hmm, that's almost impossible really. But, if you cook it to say med well, and let it rest for 20 min, try that. But a steak will never taste fantastic, like a med-rare, when it's cooked all the way through. My best secrete, no matter the cut or the cost, is to freeze the steak then thaw it out in the fridge. Once it's thawed, let sit out, bring to room temp, then cook it to med well. Not well. Theeeen let that baby sit covered for 10-15 min..you'll get a more tender steak!
