Grilling a steak over an open charcoal fire in a kettle grill doesn't have to be hard to do. Let's break it down into some easy steps:
ONE - Dry brine by covering the steaks with 1/2tsp salt per pound of meat
TWO - Put three fourths a chimney of lit charcoal on half the grill. Direct grill the steaks for two minutes per side until you get the perfect sear.
THREE - Check the temperature and put it on the cold side of the grill and cover with the lid if it is under 120F.
FOUR - Rest for five minutes. The steak's temp will continue to rise after it's off the grill.
FIVE - Slice and serve.

This worked out great for us! We put it on out let it warm up while we heat it up the grill for a half hour, we went ahead and seared it as he said 2 minutes 2 minutes 2 minutes 2 minutes and then we put it over on the indirect side we put salt on while it was sitting to warm up on both sides of the stakes, but they were the juiciest steaks I have ever had! Of course we left it on there until it reached 160 degrees because we didn't want rare. Thanks for the video

Attention: steak don't need alot of seasoning, a good sear salt n pepper, rhise who can't cook drown their food in seasoning to mask their lack of skill.

Great video but the steak stuck to the grill because you didn’t oil the grill enough. Make sure to wipe cooking oil or fat over the grill once it’s hot enough with a rag to keep your steak from sticking

Not using oil was an intentional decision. The sear side of the grill reaches 800+ degrees and would burn the oil just as fast as you could put in on the grates. That destroys the non-stick properties and can leave a bitter taste.

You shouldn’t have to. At this point you’re just raising the steak to the desired temperature as if it were in an oven. You already flipped when you seared in the beginning.

130, not 120 as he said. It will rise a 5-10 degrees so I’d go with 125.

You shouldn't, but if you must... Sear it the same way and put it on the cold side of the grill with the lid on until it reaches 160F.

Use the hand test method. Hold you open hand just above the grill; it should be two seconds before ouch; one second is to hot, more than two seconds grill is not hot enough. Clean and oil grill grate when hot before putting on food.

Love these simple videos without all the fancy gadgets. I made the mistake of buying lots of said gadgets before really learning how to grill with charcoal. I only switched to charcoal last August. I’ve recently put away most of the accessories and am trying to learn the fundamentals. Videos like these are gold. Thank you!

Leave it off to the side so it isn't over the coals until it hits medium temp. It won't take much longer.

It's good to know your grill. You are right a hotter fire will cook faster and a thicker steak will take longer. I used less charcoal, but a full chimney in a SNS will finish it in about half the time.

No. Cook any meat at room temperature to start. It's better if you have a warming oven on your stove. Put steaks in a warming oven at 120 deg for 20 min. Rest for 10 min. Then briefly on the grill to desired finish. Steaks should always be rare to medium rare. Rest for 10 min covered in foil. Serve.

It doesn't. Dry brined meat retains more moisture during the cooking process and loses less water before cooking than you'd think. Give it a test and weigh your meat before and after salting and then grilling it.
