Here is an easy one pot weeknight recipe!! This week we’re making a Pea Stew with ground beef and a side of rice pilaf! It’s a type of comfort food that will make you feel warm and cozy! Let’s get cooking! 🥕🥬🌶️🥒🥔🧄🧅🍅🫑
Ingredients:
Pea Stew
- 1 1/2 pound ground beef
- 2 cups peas
- 1 1/2 tbsp. tomato paste
- 1 tbsp. pepper paste
- 1/2 cup tomato sauce
- 5 cloves of minced garlic
- 1 tsp. red pepper
- 1 tsp. salt
- 1/4 tsp. black pepper
- a pinch of cinnamon
- 1/2 cup vegetable oil
- 4 cups water
- 2 potatoes
- 5 carrots
Rice Pilaf
- 1/2 cup vermicelli
- 2 cups yellow rice
- 1 tbsp. butter (I used ghee)
- 1/2 cup vegetable oil
- 4 1/2 cups water
Instructions:
Pea Stew
1. Begin to season the meat by adding salt, red pepper, black pepper, and cinnamon. Mix until combined and form into small ball shapes.
2. Heat the vegetable oil under medium heat in a medium pot and add the meat. Allow to cook for 10-15 min.
3. Meanwhile, chop potatoes and carrots into small cubes.
4. When the meat is cooked, add the chopped potatoes, carrots, and peas. Mix to combine.
5. Add the tomato sauce and paste, pepper paste, salt, red pepper, black pepper. minced garlic. Mix to combine.
6. Add in water, close the lid, and allow to cook for 20-30 min.
7. Serve with rice and enjoy!
Rice Pilaf:
1. Wash the rice.
2. In a small pot, add in vegetable oil and butter. Allow the butter to melt.
3. Add in vermicelli. Cook until the color changes to a brown color.
4. After the vermicelli is a brown color, add the rice. Allow the rice and vermicelli to simmer together for a minute.
5. Add in the water and salt. Cover with lid and allow to cook for 15-20 min.
6. Once the rice has absorbed almost all the water, lay a clean towel on the rim of the pot and cover with lid for 5 minutes. This allows the rice to rest.
7. Serve and enjoy!
