Thank you for this recipe Mama Joan! I'm a good ole Southern boy who loves all cultures and cuisine! I'm making your recipe today with a few additions. I rinsed them with lemon juice and water. I made the marinade with tomato, carrot, bell pepper, one Habanero, onion, green onion, thyme, basil from my garden, browning, a few splashes of Pickapeppa sauce, and water. It smells amazing in my fridge! I usually cook them in the pressure cooker so I am excited to try your version! My first oxtail was made by my Jamaican friends mom. She used Sazon and onion, browned them in the pressure cooker and then finished them in the pressure cooker. It blew my mind how delicious this cut of meat is (though my gout hates me for eating it lol)!

Thanks Mama Joan. My Jamaican mom cooks it on the stove in a pressure cooker. I never even realized it could be cooked in the oven. Although it may take longer in the oven, I kind of like the idea of some pieces getting char and caramelization. That would add a different texture to the meat. I'll definitely try it your way!
