MONTEGO BAY, JAMAICA - Today was an ultimate Jamaican food day - including many of the island’s best comfort foods and family gathering foods. We headed to the river, to cook up Jamaican curry goat, oxtail stew, and ackee and saltfish. Turned into an epic meal, great people, and an ultimate food experience in Jamaica.

Sunday is family day in Jamaica and so we all headed out to the river for a Jamaican curry goat link-up! But to get there, we took a bamboo raft, something that’s known in Jamaica, and extremely fun and relaxing. It was about a 15 minute bamboo raft ride to get to the site where Matt and the Chef’s were setting up and ready to prepare this epic Jamaicna food feast.
- Curry Goat - It would not be a party or a get together in Jamaica without curry goat, and it’s one of Jamaica’s best dishes.
- Oxtail stew - We also made oxtail stew, a rich blend of oxtail including the meat, fat, and skin. The texture was insane.
- Ackee and Saltfish - Additionally Chef made ackee and saltfish, the national food of Jamaica and easily my favorite dish of Jamaica as well. Loved it!
- Peppa shrimp - And to begin this incredible meal, we started with some peppa shrimp - scotch bonnet pepper with freshwater crayfish.
And outstanding day, and a Jamaican food experience I’ll never forget!

I am from europe and I wish that I had the money and health to have a little restaurant or just had a bigger home, then I would welcome you with open arms (well not right now with corona of course). But I´m affraid you would find denish food way to borring.. You have a lovely country and amazing personalities.

I'm Guyanese and I cab tell you Jamaican food does taste so freaking good they take their time and season their meat well and let it marinate. So delicious!

No disrespect but Guyana is in South America & in my opinion Guyanese dishes like cook up doesn’t represent West Indian. I went to Georgetown & was sadly disappointed by everything I tried, pepperpot cookup & their version of curry I found it to be sour & watery. I also tried Guyanese food in Miami & NY & have yet to be impressed by that style of cooking. The food I found to be most impressive is Trinidadian , Jamaican & Haitian food also the Bahamian seafood. Guyana food anywhere I have tried has never been good.

@@goddessn3865 Jamaica food is beyond Amazing, Tried Trini food and its curry is watery, not good as Jamaican. Haitian black rice is the thing, Bahamian food is too oily but good seafood, and Guyana Roti is amazing. I like Trinidad Callaloo and Pelau

​@goddessn3865 it's disrespectful and just plain lies. I'm guyanese and my husband is trini and he loves our food. Even his friends always asking for me to make cook-up and pepperpot and other guyanese dishes for them. Ive been in Trinidad for almost a yr now and I'm yet to find a good roti or curry, so don't hype yourself up. Of all the ppl I've met in trinidad the indians are the biggest haters of guyanese, it's like a jealousy that is hard to fathom.

@@jlara453 Most Jamaicans poor or rich we but he our own meat especially those who know butchers. Some people go to the butcher to get the tripe feet ears tail and such and carry it home to cook.

@@sandraseven6575 why would I want plastic gloves particles in my food that is going to pour more chemicals and estrogen in my system. No thank you. I will keep it gloves free. Looks perfect to me. When a chef in a five star restaurant like Fleming's preparing your food, trust me they doing it by hand. Food network and cooking channel chefs all use their hands. Gordon Ramsey uses his hands, no gloves. No matter how perfect something is, some human beings are going to be critical. That is human beings for you.

I’m a Jamaican living aboard, I’ve being watching your videos for about, 3 years now, you introduced me to so many different food from around the world, and watching you enjoying the different food from Kingston yo Falmouth to Montego Bay, I also cried, because growing up in Kingston, Ja and going to coronation market every Saturday morning with my grandma and grand dad was one of the best part of my childhood, I remember almost everyday going home from school my grandma use to say she “can smell me from down the road” because I was always coming home with crab, I’m so happy you love the ackee and saltfish 🤤 I miss Jamaica so bad, but as soon as the opportunity arise, I’ll be on the first flight home, thank you so much, for these videos, with a full heart and tears in my eyes I thoroughly enjoyed every moment of watching u eat and enjoy the meals I grew up with and still enjoy, I will continue to watch the other vids and will be rewatching for weeks to come, I absolutely cannot believe it took me over a year to find these vids😳😳😳 thank you, Mark for visiting my little island and bringing so much joy to my heart, bless up to you and your family and crew.

Chef deserves nuff nuff respect yes! I am a chef as well and I make dem kinda big meals all at once on the holidays or for friends plus baking on top of that with no help. You have to love the kitchen to pull all that out of your hat. I could not do that in the woods like that though! I would just show up in my, I'm just here for the food t-shirt and call it a day.

The goat is lean because it is all organic. Goats are left to feed on the grass or land. In dry season we mix a little natural molasses in their water so that they can stay hydrated longer. No kind of artificial food are given to them. That is how lean our goat meat looks in Nevis🇰🇳 Another island in the Caribbean.

That's one thing I am forever thankful of that my parents exposed me and my sister to the world at a young age up until we went to college.I fell in love with the world that when I finished college I moved to Asia all on my own. Currently, I am engaged to a Chinese man (i'm Mexican American) and I dream of passing the love of the world to my future kids one day! After all, we are one love one heart!

Y’all added to Jamaican culture but we needed more of you so we could have more roti. Roti is 🔥 with curry goat and every other curry dish. I remember there was a restaurant in Jamaica called Mee Mee’s that had curry goat and roti. It was by far one of my favorites.

Kay, Can you tell me which dry seasonings he used to season the oxtails. I know that one of them is Goya Adobo all purpose seasoning but then he used a seasoning that was in what looked like an old bay seasoning container but they said it was chili powder . ??? Also. Can you identify the other dry spice that he used that was in the plastic bag.

@@jessical.dupree7860 the spice in the plastic bag is dry pimento, it's a type of spice grown on the island. Very flavourful. It is widely used with meats. He also used the Jamaican meat seasoning which is the dark colour powder that he placed on the oxtail.

I agree but Jamaican food is not 100% African. The jerk meat is from the maroons and natives. Jamaican patty came from Jamaican Chinese . the bully beef and cabbage is Irish Jamaican. Etc...

Only the ackee cook right the oxtail missing things and must be fried individually then cooked, u dont put carrot and thyme in curry goat it clashes the flavour. U can take that chance with curry chicken even that no thyme. Thyme is for beef, ackee and those kinds but not curry because it clash with the natural curry flavour. Fo try street food and see
