Hi my name is Ida and welcome to my channel of Sweets and Beyond. This is the first of many videos to come of a series of Puerto Rican cooking. This is the beyond part of Sweets and Beyond. I would like to bring to you in my videos my knowledge of true authentic style Puerto Rican dishes, from a born and raised Ponceña. Feel free to like, comment and share your knowledge and recipes below,
The ingredients that I used today are:
3 bunches of cilantro
3 bunches of culantro (spiny cilantro or recao)
2 cups of garlic cloves
15-20 aji dulce or sweet pepper
3-4 large onions
4-5 Cubanelle peppers (or bell pepper)

Best to grow your own cilantro. I grow all my Sofrito ingredient. I learned it from my mother. Our seeds were passed down through generations.

Waterboarded wait! Your seeds were passed down through generations? Are you real? Why? 😳 What makes them different? I am asking because I’ve noticed that cilantro and recaito leaves don’t smell or taste like they used to several years ago. They don’t have the same aroma or flavor and you have to use more sofrito when cooking with it because the flavor is weak.

if your eyes burn while cutting Onions make sure you have a Bowl of Water beside the cutting bore and it will help... Onions give off a mist that is drawn to moist areas like your eyes... Bowl of Water gives it something else to draw to.

didn't know what sofrito was or it even existed until I met my wife, who's Puerto Rican (I'm Mexican). I made your sofrito and she loves it; she said it's better than her mother's :-) I split my batch into two, I add a couple of jalapeño peppers for my batch, since I like heat, my wife does not.

+adam thompson ….Hello, the recipe, as she makes it, makes 12 cups (3 quarts) of sofrito. That's how much I got when I made it. I have a vacuum sealer (Foodsaver) which I use to freeze most of it. I leave a jar of sofrito in the frig (also in a vacuum sealed jar) for ready use. You can freeze without the Foodsaver, using plastic jars as my wife does.

Ingredient Amount I used: Cilantro - 3 bunches or 12 oz Culantro* - 3 bunches or 7 oz Aji Dulce (sweet pepper) 15-20 peppers or 8 oz Garlic (skinned) 2 cups or 12 1/2 oz White Onion (skinned) 3-4 Large onions or 2 1/2 Ibs Cubanelle peppers (stemmed and seeded) AKA Italian frying peppers (or Bell peppers)4-5 peppers or 1 1/2 Ibs Makes 6 pounds 4.25 oz or 12 cups or 3 qts I used a food scale. For one quart use 1/3 of the ingredients.

Today I made your sofrito, y dejame decirte Que I will never buy it again. It was less than 8$ to make and I have over 5 months worth in the freezer. I love the taste of cilantro cause I grew up tasting it in almost EVERYTHING. My grandma never skipped out on the cilantro and when I found out that most people don't like it I was so shocked lol.

Ida... THANK YOU SO MUCH for your videos! I truly appreciate them. I didn't grow up around my Puerto Rican culture and was never taught anything about it either. I started researching on my so as not to deprive my children of THEIR heritage. Your videos have definitely played a major role in my research and I have been able to follow your detailed videos to learn AND teach my wife and children how to cook authentic Puerto Rican food! J A Y S I C K A Correct, but we seem to prefer using parsley over cilantro & young onions- scallion/green onion instead of the big onion. I'm not to picky, I use whatever I have, I've even made it with leeks & shallots! 😂 My mom is so old school, she makes hers fresh everytime she cooks!😍 And hers is simple - scallions, whole black pepper, cloves, Maggie, scotch bonnet/habanero & garlic - all mashed in her pilon. So good! How do you make yours?

My husband is Haitien. When I cook for him I use less sofrito because he finds the flavor too strong. That’s because he is not used to the cilantro. My mother in-law didn’t know how to use the cilantro and didn’t like it. But I told her to use less and now she uses it in her food because of the health properties it has. Cilantro is good to clean your kidneys.

I had a Puerto Rican friend make this for me some years back. My food would come out AMAZING!!!!!!!!! Let's not talk about how my house smelled! My husband didn't believe me when I said I cooked whatever meal I did lol. Thanks for the memory! I plan on getting a food processor and when I do this is first on the list!

This is a great video, I call my mother every couple of months for her recipe, and she constantly gets annoyed with me because I do not memorize the recipe. Now I think she will get annoyed with me because I am NOT using her recipe :)

Thank you for this video I've been really wanting to make my own Sofrito and my niece in Florida sent me her ingredients of the way she makes it as well but I thank you ladies for taking your time is it explaining everything listen I can cook Spanish food very well but I'm about to make my sofrito and just keep it up in my freezer so I don't have to go to the store and buy any and may I give you a compliment you have the most beautiful healthy nails that I've seen on a person in a long time they are beautiful

What a inspiration! My mom in law taught me how to make this but because of her lack of the correct word to use for the Cubanelle and culantro we left them out. Of course it did not taste like her's from NYC she would bring. But now with the actual names I got on line and ordered the plants to add to my garden. Both have arrived and I am sooooo excited that I can now make the traditional recipe. Now to learn about their seeds so I can grow my own plants next year.

Food processor, yes! I started this 'tradition' several years ago. My mother still goes for the blender, but mine has FLAVOR!!!! :) I put them in (designated) small wonton cups. Its usually how much I use when I cook any how. I love sofrito.

I tried your Sofrito for the first time on yesterday. I marinated some chicken breasts in it for several hours and then put the chicken on the grill. Wow! It was a huge hit with my family and friends. Absolutely delicious. I had some chicken left over for lunch today and my son just took him a couple of pieces to work with him for his dinner later this evening. Again, absolutely delicious!!

I made this and froze it last month. Then last week I made the Spanish rice and it was really good . My family LOVED it. Until now I never used cilantro in my cooking and my family was always asking me to make Spanish rice but every time I tried or they never liked my rice and I didn't know why. This time I used your recipe and made the sofrito and added it to my recipe (sasson, olive oil, beans, etc.) ....oh my....REALLY good! This is the ingredient that I've been missing all these years. Now they're asking me to make this every day. I'm really glad I found your channel .

omg I love watching your videos and have made several of your recipes. when I same this one it bought tears to my eyes. my mom did hers the same way u do it, especially finishing it by putting them in the ice trays. she had several trays she would use just for this. thank you so much for your videos.

spanish sweet peppers were peppers my grandmother (and we are from the usvi) always kept in her kitchen..its was like gold...i am happy you use this ...so hard to find..i love love your videos and recipes..they go back to the original basic of caribbean/latin cooking

I tried this recipe and it's amazing. I used the sweet peppers in a bag and green bell peppers. I use it in a lot of my recipes because my husband and kids don't like to see onions or bells peppers in their food. Now they eat my food and can't believe how good it is now. It's all because I can now cook with the onion and bell peppers!! Thank you for this recipe and my family thanks you too!!

Beautiful....everyone I've seen make this throughout the years use a blender and they put water in order for it to be blended properly...you are the first one I've ever seen use a processor and no water....it makes perfect sense...this is the only way I will make it from now on...thanks so much for sharing....

Thank you so much for this video I love Puerto Rican rice dishes. One of my good friends is Puerto Rican but she doesn't make her own sofrito she gets it from a relative so this video was very helpful in teaching me how to make my own. I've been trying to make my own Arroz con gandules but It doesn't come out right because I didn't have the right pot. She told me that I needed a "caldero" So I recently ordered one Amazon. I looked high and low in stores for one but they are so hard to find in my area. So now I'm anxiously awaiting for it to arrive so I can try to make the rice again...

Hi Ida - this is my first time watching your videos and I am hooked!!! I used to be terrified of attempting Spanish cooking even though I am Latina! I just never learned!!!! I am so excited to try your recipes!!! I don't know where to start lol...tostones, sofrito and the ensalada de coditos is where I may begin ...if all goes well then maybe, just maybe I will be brave enough to try the arroz con gandules :) Thank you so much for posting these videos -not everyone grew up learning this. I am so excited, its terrible being Latina and not knowing how to cook the classic Latin meals! Wish me luck -I am off to the kitchen :)

I like your way of doing sorfrito, I made it but I put it into snack zip lock bags, then I put all the bags into one big. and then I put it into the freezer,when I need it I pull out a bag. thanks ,love ya!

I do the same thing. Easy to thaw what you need in warm water. I have been doing this for years so my pepper harvest does not go bad on me

Absolutely the best recipe for sofrito. My family has never used bell peppers so as soon as I see a bell pepper sofrito recipe i scroll past it. I don’t like the harsh taste of bell peppers. This recipe is perfect. It’s authentic and doesn’t have weird added ingredients that aren’t Puerto Rican. this is the best Ida! All these years later and it’s the best

Hey Chica... I was looking at your sofrito & after 21 years of making it with a blender. I'm going to use my food processor I just bought for my pasteles. P.S. the ice cube tray is a wonderful idea. Amazing that even when you know how to cook you learn & get ideas from other cooks ❤💋thanks

Just how my grandma used to make it! I can't wait to make my own! I'm even going to try to grow my own ajis dulces and culantro. I'm in Florida so the climate is perfect. For those having a hard time finding the ajis dulces they are also called cachuchas, and the culantro is also called long coriander. From Wikipedia: Other common names include: cilantro coyote (Costa Rica), recao (Puerto Rico), cilantro ancho or sabanero (Dominican Republic), long coriander, wild or Mexican coriander, fitweed, spiritweed, stinkweed, duck-tongue herb, sawtooth or saw-leaf herb, and sawtooth coriander.

I made my sofrito last night following your recipe. I literally went to two different Farmers Markets, and couldn't find Aji peppers. So i gave up and used sweet peppers in the bag I hope it tastes good! ill be making your rice with pigeon peas today for dinner and a whole chicken yummy! :)

Awesome video. For thoses that cant find certain ingredients at their local supermarket check your local Spanish bodegas if they don't have them visit your local Asian markets. They usually have all the ingredients as they use them as well in their recipes.

you make it just like my mami yummy...she also puts them in ice trays so much easier to just use the cubes of sofritos...we dont live close i live in jersey and she lives in Delaware every time i go visit she has my bag ready with the cubes..i should try doing it myself now....lol

You use all the ingredients that my Mom uses! She always told me to get culantro in addition to the cilantro, but I never knew what it looked like. Now after watching your video, I finally do. Mom also gave me her food processor too. So I'm all set to try this!

Great video! I make mines the same way but my abuela would do it in a pilon fresh everyday and used to say that fresh was the only way and that my way was the lazy way lol... God rest her soul

I find the best secret to good Puerto Rican food is that you can't substitute ingredients. If I can't find ajicito dulce peppers or good culantro, then I wait until I can find them.

Lol, true I wont cook unless I have homemade sofrito and it has to be either my moms my sister or my own. Never bring me no store bought frozen or can(yes they sell it cans what a sacrilege) sofrito ever.

I enjoyed watching this a lot! I have watched other "HOW TO" videos on SOFRITO but this one is quite similar to the way my mother does it...and she is "PURA-CEPA":)...except she uses the a blender and adds salt as a preservative and cold pressed olive oil to help process it). VERY old school indeed! I guess I'm gonna bring her up to date and get her a food processor for Mother's Day! LOL!

I made it tonight and it came out beautiful in my food processor, and luckily I was able to find all the needed ingredients at the Asian store near me. Ur da bom Ida! Thank you. My childhood friend from Connecticut, moved back to PR about 5 years ago.. I miss her a lot..she also lives in or near Poncena, just her and her elderly mom and all her dogs and cats..she's very sweet like you, LOL, I seriously should hook you two up since your so near one another, she loves to cook also. I bet she would just love to meet you.
