How to make Candied Ginger

No need to buy candied ginger anymore when you learn how simple it is to make at home. It keeps for up to a month and can be used in baking or even as a sweet treat to nibble on.

Ingredients:
1 cup sugar
1 cup water
150g fresh ginger
tiny pinch salt
Method:
Peel and slice ginger finely. Place in a pan and cover with water, bring to the boil and leave to simmer for 10 minutes, then drain.
Add the sugar and water to the pan and bring to the boil, add the ginger and pinch of salt and cook for 2 -3 minutes on a high heat.
Take off the heat and leave ginger to sit in the syrup for 15 minutes then drain the syrup through a sieve, you can keep this ginger syrup for making drinks with! Make sure you shake off as much excess liquid as possible from the ginger.
Spread 2 tbsp granulated sugar on a plate and toss the ginger pieces in the sugar. Spread ginger on a baking tray or wore rack and leave to dry and cool down. Once nearly dry you can sprinkle with more sugar if you like. Once cooled and dried you can store this in air tight container at room temperature up to 1 month.

Candied ginger on a pick is a beautiful and fragrant garnish for cocktails. One of my favorites is the penicillin. It’s scotch, honey ginger syrup, and lemon juice, shaken and poured on the rocks with a float of a smokier Islay scotch. The candied ginger garnish complements it perfectly.

Thanks! I have suffer from stomach pains & ginger is the only thing that helps with the pain. I make a batch of these about once a week & I snack on them while I work! ✌🏾

With the ginger tea, if you add an equal part of green tea to it and mix in the honey while it’s still hot, it makes a delicious tea that can be enjoyed cold (my preferred way) or heated up when u r feeling down.

I read somewhere that heating honey can destroy its health benefits. Any thoughts on that?? I used to put honey in my hot tea until I read that. Then I switched to using sugar. But I still like to have a spoonful of honey daily. You ever try putting a capful of Apple Cider Vinegar in your tea?? I tried it, loved it, and now my tea doesn't taste right without it!! ✌

Thanks for the feed back! I dried it in the dehydrator for 4 hrs. at about 115 degrees.It came out real tasty and good.Jimmy

The dehydrator is a great idea to lock in all nutrients and over 115 will destroy a lot of its phytonutrients.

Thanks so much for sharing , I just have it around for a little treat after dinner and my guest loved it they ask me for the recipe when I said I made this and they also wanted to take some home so I went in the kitchen while we had tea and when time to go ( evening end ) they had a gift to remember this special evening . What a coincidence that you make this video this week as I made crystallized ginger and syrup for the first time, two days ago! I can't get enough ginger. I use the syrup for my morning tea. I used a pizza screen to dry overnight. Also made crystallized lemon and orange peel, but I have to sell it to others as candied jerky.

I planted the ginger in mid September It is only now in early November It is starting to sprout Auckland city is only subtropical

There is a good video by “Footprints in the garden” showing how to grow store bought ginger. That’s my real plan, but after cutting out the eyes and sprouting them, you still have most of the ginger root left. So, that I will use for candy. Yum!

Thank you. Btw, you really don't have to peel ginger,it is a waste if you do. I easily use halve a kilo per month for tea and cooking. It is good for you.

I made this the other day and it was an absolute disaster start to finish. after 16 hours of stacking failure on top of failure I just ended of making. a too strong simple ginger syrup. I used it to make a too strong Kentucky mule and adjusted by switching to straight bourbon. it was fantastic after half the fifth and really took the edge off of my parents abandoning me at that fire station when I was a kid and my three failed marriages. so I would highly recommend making candied ginger 10/10

I love Ginger. I buy so much of it at the ShopRite that the lady asked me if I'm going to build a mansion size gingerbread house LOL! I freeze my Ginger and then run it under cold water scraping with a spoon. then I dice it up put it in a blender and cook it for 10 minutes. I then add a whole bunch of honey and fresh squeezed lemon juice, about 15 to 20 lemons. it's so concentrated which makes it so much more convenient that one gallon makes an equivalent of 3 gallons of Ginger honey and lemon juice

Brown sugar is white sugar with molasses added. Your body doesn’t know the difference between raw and white sugar. Raw sugar will be processed by your body the same as white

Hi there enjoyed your video and tried out the recipe. I've had these drying in direct sunlight for 2 days now. Still seems a bit wet but maybe these are supposed to be soft and pliable? Anyway wondering if I could accelerate the drying process by putting these in a 200⁰ oven for 30 min. or so. Thoughts?

I made some, but it as very strong, like someone had added hot peppers to it. Do you have a way to tone down that harsh after taste? By the way, I use the ginger flavored water and sugar leftovers to make ginger wine:).

thanks. before finding this youtube channel i thought candied ginger was difficult to make. i look forward to simple recipes and shall try this one. how many grammes or millilitres is a cup? i live in Sweden. here everything is metric. fresh ginger is extremely expensive so i want to grow it myself, organically at home. the trouble is you have to find root that has not been treated to prevent sprouting. not easy.

Edwin Reffell It’s just equal parts sugar and water by volume. I used an Australian “cup”, which is simply 250 ml. An imperial cup is slightly larger, and a US cup is slightly smaller, but as long as you use the same cup for both measurements you still get simple syrup.

Do you let it " sit and steep" on or off the heat? If on the heat, do you keep the heat on any setting ?

Looks like a great recipe but I think your 2:34 you biggest heath issues would be the amount of Teflon your ingesting! Look at the shape of that pot! Stainless steel, Copper or Iron is the way. No ceramic or any "coated" pan works the best and good for your health! 4 year old comment but hope your still alive and kicking!

I’m a retired electrician. I noticed that, too. Looks like the kitchen was remodeled and they moved the cooktop. They should have had an electrician move the outlet and if it is like most older kitchens, it probably needs more outlets. Just be careful that your cords don’t melt from the heat of the stove.
