To further reduce the “liver-ness” taste that some find a turn-off, I poach the trimmed livers in red wine before sautéing with shallots. Discard red wine. The wine removes all hints of the tannins in the livers. I have also used duck fat (when I can find it) to ramp up the richness. And I add coarsely ground black pepper.

Thanks for the tip. I used half and half to get rid of the “liver-ness” but I will try the red wine next time since I have a dozen or so bottles to go through.

Have heard that pouring a thin layer of melted schmaltz (chicken fat) over the liver pate before cooling it will stop the top layer of the liver from discoloring, and the schmaltz adds richness to the servings.

The discoloration is oxidation. Any oil(fat) will help to mitigate it. As long as it's fresh and you maintain safe kitchen practices you should be ok though.

Elle is my favorite of all the ATK chefs. I've never looked at boneless pork chops the same after she showed me what's up. If you eat pork and you don't know, it's a must-try recipe. My Brussels sprouts are always a hit at get-togethers. Thanks Elle

If you don't want to buy a bottle of brandy/vermouth just for this, add a teaspoon or so of vinegar or lemon juice during the simmering step. The classic French way is with alcohol, but you're just looking for sweetness and acidity to balance all the fat and rich liver

You can usually get tiny airplane sized bottles of these if don’t want a regular size bottle. I do that with wine for cooking so I don’t have leftover wine and always have a variety to select from

the last time I ate liver pate , was 25 years back home in Italy, when i see this recipe it draw in mind the memories, i jumped on it and did it exactly as it is explained , oh man , i is so delicious . thanks so much for the good explanation. it was great.

I've always hated liver but a while back I was served some pork liver pate in a German restaurant. OMG, is was one of the best things I've ever tasted. Rich and savory, but not "livery" at all. I'm anxious to see how this recipe compares.

This is my favorite holiday indulgence. I add a little cinnamon, cloves, nutmeg and sauted garlic. My recipe calls for a splash of cream and some softened butter at the end. I also found that it can be molded for a fancier presentation. Ive always used frozen chicken livers, but will try to find fresh next time. (The frozen tastes fine to me).

I think this would be great on Banh Mi sandwiches! Speaking of which I’d really be interested in how to on making the bread for those Banh Mi sandwiches. The bread from Vietnamese bakeries are so much better but I’m not close to one. That sandwich is all about texture and flavors!

Descendent of two Vietnamese immigrants here, the bread is basically either French Bread or a Baguette. Also, Duck Liver Paté is widely used on Bánh Mì sandwiches.

Great episode! As a person of Central European Jewish descent, I LOVE liver pâté, although we just call it “chop livah!” However you prepare it, it’s either delicious or inedible. There’s really nothing in-between.

@@wotan10950 My relatives on my mom's side are all from Noo Yawk! I hear you loud and clear. My dad married my mom in the '50's and promptly moved our family to California. It wasn't the area, it was them in particular. I love the place. I haven't been there for decades, but it's a long flight. I do hope to make it back in future years. BTW, my fiancée in Australia reminds me of that "accent" because they stem from the same place. The UK.

I love a good pate. Maybe you should mention great additions like pork fat cracklings, using schmalz instead of butter, and black truffle shavings. Also it is great made with duck or goose liver.

I have never had chicken livers. I am generally not a liver fan, but I do love a good liverwurst (hard to find a good one!). I cannot find liverwurst locally (Philippines), and doubt goose is very common here either. I will have to try this recipe. 😎

Somewhere I have my grandmother’s recipe which was more course (hence called “chopped chicken livers” and I think had hard cooked eggs. I would guess way back then (1960’s) she would have hand chopped everything since food processors did not exist and I doubt a blender would have worked.

My polish grandmother made chicken liver pate too -- and put hard cooked eggs + a little mayo in it. it's still a family favorite (even though I know it's not the traditional way it should be made).

I’d suggest replacing livers with mushrooms. Fresh not dried. But a selection of crimmini, portobello, woods ear, oyster would be tasty.

Beef liver is usually too strong and grainy for nice pate. Calves liver might work, but I usually just cook it for dinner with onions if I find fresh calves liver!

No link to the recipe as promised. Even as a member I can't find it on the site. I guess you have to be signed up for the cooking school. If you're savvy enough you can get the instructions in the transcript, but not the same as the recipe

So, I should not bother with the creme fraiche? If it's not needed, that would be a blessing. Hard to find and expensive. Other than that, this is exactly the recipe I've been using for decades. I do add pistachios on occasion.

It does not pay to be a chicken, even if you're free range. If they don't get you when you're an egg, you end up in the frying pan or oven, or having your liver removed and made into a nice pate that can be shared with the whole family, with the scraps going to the Family Dog.

I truly looked forward to making this Pate with some chicken livers I have in my freezer, but then I saw the two liquor ingredients. I do not drink and didn't want to spend the money on two alcoholic drinks that I can't use and don't want in my cupboards.

That’s a lot of work for only a few people! I’d rather buy a quality brand in the supermarket for 3-4 individuals. Whole Foods and even Harris Teeter have great Pâté

You got my view because I love chicken livers so much, but Breville did this recipe several years ago with Magnus Nilsson. Still a great reminder though, even if I made it wrong the first time.
