How To Make Consomme - Clear Soup Recipe
Materials:
200-250 grams of lean ground beef
2 liters of flavored water
1 leek
1 onion
2 egg whites
2 carrots
2 bay leaves
1 teaspoon of black pepper
A small bunch of parsley
Preparation of:
1. Add the minced meat and egg whites to a bowl.
2. The vegetables to be used are cut into small pieces and added to the bowl in the vegetables and all the ingredients are mixed.
3. Add the flavored water used with the prepared mixture into a large pot. Add the bay leaves and black peppercorns and mix it for the last time.
4. Open the bottom of the pan on low heat and wait for 30 minutes.
At the end of 5.30 minutes, the heated egg whites will start to come to the surface of the water by cooking.At this stage, a hole is made in the middle of the pot and the foam and unwanted residues accumulated in the hole are removed and kept on low heat for 1.5 hours.
6. Our soup, which reaches the desired clarity, is taken from the stove and filtered with cheesecloth with the help of a ladle.
7. If there are pieces of oil on the strained console, it is served with a napkin.
